How To Make Creamy Avocado Egg Salad Sandwiches

What do you get when you combine hard boiled eggs with rich and creamy avocados? Combining them elevates an ordinary egg salad sandwich to new heights! Add some crispy bacon bits for some smoky goodness, a diced red onion, for some additional crunch and you end up with a creamy, irresistible egg salad that’s utterly devour-able. You’ll never go back eating an ordinary egg salad sandwich ever again!

Start by frying bacon in a skillet over medium heat until golden brown and crispy. Transfer to a paper towel lined plate to drain off excess grease. You know any recipe that calls for frying up some bacon is going to good…right? Bacon and eggs go together like bread and butter, cheese and crackers, or wine and cheese, right?

TIP: Instead of frying strips of bacon, cut them into half inch pieces.

Resist the urge to sneak too many pieces!

In a mixing bowl, mash hard boiled eggs with a fork.

Add diced red onion, salt, pepper, bacon and diced avocado to the bowl.

Mash ingredients together with a fork.

Add mayonnaise and stir to combine until you have a nice creamy mixture.

Adjust the amount of mayonnaise to your liking. I like a rich creamy egg salad so I’m pretty generous with the mayo, but you can certainly use less. Taste and season with additional salt if needed.

Spread egg salad on a toasted piece of whole grain bread and top with tomato slices.

Top with sprouts, and arugula. Arugula brings a peppery bite to the party. If you’re not a fan of arugula you can substitute with spinach leaves or your favorite lettuce instead.

Top with another slice of toasted bread.

Open wide! Enjoy!

Ingredients
  

  • 4 strips bacon, cooked and crumbled
  • 3 hard boiled eggs, peeled

  • ½ tsp Kosher salt
  • ½ tsp black pepper
  • 4 slices whole grain bread, lightly toasted
  • Arugula or spinach leaves
  • tomato slices
  • alfalfa sprouts

Instructions
