How To Make Flakey Cinnamon Sugar Palmiers

Looking for a last minute sweet treat to serve up at your holiday get togethers? Something a little different than a frosted sugar cookie, or plate of fudge? These easy to make palamiers require only four ingredients and come together in just a few short minutes. If you have a sheet of puff pastry in the fridge you can easily whip up these delectable little pastries to serve up after all your holiday meals. They’re light and crisp, and the perfect sweet bite to finish off the evening of holiday celebrations.

Line 2 baking sheets with parchment paper. Set aside. 

Preheat oven to 400℉.

Lightly flour your work surface and roll out dough with a rolling pin into a large rectangle.

Sprinkle dough with sugar and then cinnamon.

Using a dough scraper fold a 1 inch strip of one edge (the long edge) of the dough toward the center of the dough.

Repeat on the other side.

Fold each strip over again toward the center of the dough leaving about a ¼ inch gap down the center.

Fold the dough in half making a long log.

Cut the log into 24-26 inch pieces with a sharp knife or dough scraper.

Place pieces, on thier sides, onto the parchment paper lined baking sheets.

Brush with beaten egg.

Sprinkle with additional cinnamon sugar mixture. 

Bake for 15 – 20 minutes, or until light golden brown.

Remove from oven and allow to cool for 5 minutes before transferring the pastries onto a serving plate.

Using puff pastry dough, one of my favorite convenience items, means I can whip up a batch of these pastries anytime the mood strikes. The flakey pastry dough melts in your mouth and the sugar and cinnamon caramelize all along the edges as they bake in the oven giving them the most delectable, chewy, browned sugar skirt that makes these Palmier’s utterly divine. The perfect sweet treat at the holidays or anytime you’re hit with an overwhelming cinnamon and sugar craving.
