If you have just five minutes in the morning before dashing out the door to throw a handful of ingredients into your slow cooker you will come home to some of the tastiest sweet & spicy shredded chicken sandwiches you’ve ever served up in your slow cooker. The tender juicy chicken meat with its lovely kick of heat and touch of sweetness pairs beautifully with the creamy coleslaw in each and every delectable bite of these sandwiches. You can easily adjust the spiciness by using less cayenne and red pepper flakes but the creamy coleslaw does a good job of neutralizing most of the sting. We found these sandwiches to be utterly delightful and full of flavor.

Start by placing chicken breasts in the bowl of a slow cooker and top with honey and brown sugar.

Sprinkle seasonings; cayenne pepper, garlic salt, smoked paprika, and red pepper flakes over the top of the chicken.
On a scale of 1-10 these sandwiches are about a 6 on the spicy scale. Reduce the amount of cayenne pepper and red pepper flakes to suit your desired heat and spiciness level. Add more if you like it really spicy!

Drizzle with vinegar.

Cover and cook on low for 8 hours.

Remove chicken breasts and shred them with a fork.
Return shredded chicken to the slow cooker and stir with the juices in the bottom of the slow cooker. Cover and cook while you prepare the buns and the coleslaw.
If you are pressed for time you can easily use a prepared coleslaw for these sandwiches. But if time permits, I highly recommend making your own coleslaw from scratch. It’s quick and inexpensive to make. Plus it’s a much healthier alternative to anything you can purchase at the market. Toast buns in a skillet until lightly browned and toasted.
To serve, top toasted buns with a generous pile of shredded chicken, some coleslaw and sliced pickles if desired.

The creamy coleslaw helps neutralize some of the spiciness of the shredded chicken so you are left with bites of flavor packed chicken with the creamy slaw in each bite. These Sammies are oh so, so good! Adjust the amount of cayenne and red pepper flakes to suit your personal preferences, but the amounts called for in the recipe provided just the right amount of heat for us. Slow Cooked Spicy Chicken Sandwiches
Equipment
- Slow cooker
Ingredients
- 2 large boneless, skinless chicken breasts
- ½ cup honey
- ¼ cup brown sugar, packed
- 1 tsp cayenne pepper
- 1½ tsp garlic salt
- 2 tsp smoked paprika
- 1 tsp red pepper flakes
- 2 tbsp white vinegar
- ½ stick butter, sliced
- Brioche buns
- 2 tbsp mayonnaise
- dill pickle chips, optional
- coleslaw
Instructions
- Place chicken breasts in the bowl of a slow cooker.
- Top with honey and brown sugar.
- Sprinkle seasonings; cayenne pepper, garlic salt, smoked paprika, and red pepper flakes over the top of the chicken.
