If you’re still trying to use up the last of the leftover turkey from Thanksgiving I have an excellent salad recommendation. I’ve been seeing this Grinder Salad all over the internet and it’s getting rave reviews from everyone that tries it. The creamy, yet tangy dressing sounded delicious, and the fact that I had a little bit of leftover turkey that needed using up finally prompted me to give this recipe a try. And to be honest, I just couldn’t stand the thought of yet another turkey sandwich! If you’re in the mood for something other than another turkey sandwich keep reading to find out how easy it is to make this delicious salad. There’s a reason it’s all over the internet.

Start by preparing the salad ingredients.

Place sliced red onion, pepperoncini peppers, cherry tomatoes, cubed cheddar cheese, chopped salami, and the shredded turkey in a large mixing bowl.

Top with chopped iceberg lettuce. Set bowl aside while you make the dressing.

Place mayonnaise, red wine vinegar, grated Parmesan cheese, minced garlic, oregano, salt, pepper, and red pepper flakes in a glass jar.

Seal jar with a lid and shake well to combine all the dressing ingredients.

Pour over the salad ingredients in the mixing bowl and toss to coat with the dressing.

Serve immediately. Top each serving with freshly ground black pepper if desired.

I know why this salad has gone viral…it’s so yummy! It’s creamy with a little tanginess that gets your tastebuds going. The salami, turkey and cheese give it some substance making it a filling meal. The pepperoncini and red onion give it a little bite and the tomatoes bring some sweetness to the party. This is an outstanding salad that’s easy to make so you can have it anytime the mood strikes.
