Light & Fluffy, Four Ingredient, Quick & Easy To Make, Soda Biscuits

There are some nights when I’m halfway through making dinner and I realize I didn’t plan ahead to serve up some bread with dinner! Horror of horrors!!! Let’s face it, certain meals just scream for bread or biscuits, right? Soup? Stew? Chili? A bowl of soup without a crusty loaf of bread? No biscuits to mop up the gravy in the bottom of your bowl of stew? That would be a sad meal indeed! Making biscuits from scratch can be too time consuming if you’ve forgotten to plan ahead, and sometimes you don’t have all the ingredients, like buttermilk on hand. What’s a girl to do?

These tasty biscuits to the rescue! Not only do they come together super fast, they bake up quickly and I bet you have all the ingredients in your pantry and fridge right now. I’ll wait while you go and check.

The flavor of these biscuits is similar to that of King’s Hawaiian Rolls, with just a hint of sweetness.

NOTE: If you don’t have Bisquick on hand you can easily make your own for this recipe. Combine 2 cups flour, 3 teaspoons baking powder, 1/2 teaspoon salt and 2 tablespoons butter or shortening. Pulse the ingredients together in a food processor to combine.

Preheat oven to 450°F.

Place butter in an oven safe casserole dish. Place the casserole dish in the oven until the butter has melted. Once the butter has melted, remove pan from the oven and set aside.

In a mixing bowl stir together 2 cups Bisquick, sour cream and lemon lime flavored soda until combined.

Note: Don’t use diet soda for these biscuits, it will produce a bitter, chemically, unpleasant after taste.

Once combined, pat together with your hands to form a soft, sticky dough. 

Lightly flour your work surface with a little Bisquick.

Pat the dough out to about ½ inch thickness.

Use a 3 inch cookie cutter to cut out 8-9 biscuits.

Place the biscuits in the casserole dish on top of the melted butter.

Bake biscuits for 15 to 18 minutes or until light golden brown. The biscuits will soak up the butter in the bottom of the pan as they bake. 

Don’t they look lovely?

Remove from oven and brush with some melted butter on top to serve. Can’t have all the butter just on the bottom…that just wouldn’t be right! Life is all about balance…right?

These biscuits have been making an appearance at the table more and more often. They come together so quickly and I always have the ingredients I need on hand to make them. I hide the soda in the pantry behind the dried beans so my teenager never finds it, I have to be sneaky that way. He’s a soda drinking fool!

Any leftovers, if there are any (seldom happens around here) but if there are leftovers they are fantastic the next morning used for breakfast sandwiches. Delicious with eggs, bacon and cheese! Or just enjoy them slathered with butter and jelly with a cup of coffee. Yes, I know, more butter…LOL. They are oh so good!

These biscuits are perfect for making ham sandwiches to use up some of that leftover ham from your holiday meals! Turkey sandwiches? Yes please! Yum! Get in my belly now please!!!

  • ½ cup lemon lime soda, not diet

Instructions

  • Lightly flour your worked surface with a little Bisquick.
  • Pat the dough out to about ½ inch thickness.

  • Place biscuits in the casserole dish on top of the melted butter.
  • Bake biscuits for 15 to 18 minutes or until light golden brown.
