Mini Egg Bites

These tasty little eggy bites of goodness are packed with veggies, ham and cheese. They take just a few quick minutes to assemble and cook up quickly in the oven. Great for on-the-go breakfasts, or as a terrific addition for brunch. I made these for a ladies brunch get together and not a single one came home with me, they gobbled them all up. They were a HUGE hit! You can use regular eggs or an egg substitute if your’e trying to save on calories, either will produce little bites of deliciousness. Got some leftover ham from Easter sitting in the fridge? These tasty bites are a great way to use up some of that leftover ham in a unique and tasty way.

How To Make Mini Ham & Cheese Egg Bites:

Preheat oven to 350℉.

Chop onion, green bell pepper, and ham. Beat eggs in a small bowl and season with salt and pepper.

Shred the cheese. I used Pepper Jack, but a Monterey Jack, Colby Jack, Cheddar or Swiss would also be delicious. You can use any cheese that melts well.

Spray a Mini Muffin Pan generously with non-stick cooking spray. 

Place about a teaspoon of diced red onion, and diced green bell pepper into each muffin cup. 

Top with diced ham and shredded cheese.

Pour eggs into each muffin cup filling each cup about ¾ full.

Sprinkle a pinch of parmesan cheese onto each cup.

Bake for 25-30 minutes or until eggs are set and the tops of the egg bites begin to brown.

Remove pan from the oven and allow to cool for about 5 minutes before removing from the pan.

They will deflate a little as they rest.

Serve egg bites warm, with some salsa or hot sauce if desired.

Not only are these oh so easy to make, they pack a mighty punch of flavor in each little bite! Loaded with protein, fresh veggies and melty cheese, there’s something for everyone to love. You can easily change up the flavor profile by using a different cheese. Cheddar, Colby Jack, Swiss or Mozzarella would all be delicious. Any cheese that melts well will work. Use cooked sausage or bacon instead of ham if that’s what you have on hand. Try them with diced tomatoes, or red bell peppers and green onions. The flavor combinations are many so you can easily change things up and pick your favorites! Be sure to give these little cuties a try, you won’t be disappointed. They’re DELICIOUS!

Equipment

  • 24 cup mini muffin tin

Ingredients
  

  • non-stick cooking spray
  • 6 large eggs, beaten
  • salt and pepper, to taste
  • ½ cup red onion, finely diced
  • ½ cup green bell pepper, finely chopped
  • ½ cup ham, chopped
  • 1 cup pepper jack cheese
  • 4 tbsp parmesan cheese, grated

Instructions
 

  • Preheat oven to 350℉.
  • Spray muffin tin generously with non-stick cooking spray.
  • Place a teaspoon of diced red onion, diced green bell pepper and chopped ham into each muffin cup.
  • Top with shredded pepper jack cheese.
  • Beat eggs in a small bowl and season with salt and pepper.
  • Pour eggs into each muffin cup filling it about ¾ full.
  • Sprinkle a pinch of parmesan cheese onto each cup.
  • Bake for 25-30 minutes or until eggs are set and the tops of the egg bites begin to brown.
  • Remove pan from the oven and allow to cool for about 5 minutes before removing from the pan.
  • Serve egg bites hot with salsa or hot sauce if desired.
