Quick & Easy, Beefy Tortilla Chip Enchilada Casserole

Every so often I come across an incredibly easy to make dish that my family actually loves. As much as I enjoy cooking, there are days when time is short and I’m just not in the mood to cook up anything that requires a lot of time and energy in the kitchen. Are you having one of those days? You want to cook up a meal that your family will enjoy but you’re just not in the mood to pull off an elaborate meal? This might just be the perfect recipe! It has all the traditional Mexican flavors everyone loves plus there’s loads of melty cheese for all the cheese lovers in the family.

Not only is this one of the easiest casseroles to make, but it uses what I call “pantry” ingredients. The recipe calls for ingredients that you have in your pantry, freezer and most likely have in the fridge. How awesome is that?

Pair this tasty casserole with a side of this Best Restaurant Style Spanish Rice. It’s easy to prepare and you can easily get it going on the stove in a few short minutes while the casserole is baking in the oven.

Round out the meal with a side of these fabulous Monster Mash Refried Beans. Pop them in the oven to cook up alongside the Enchilada casserole. Not only are they a delectable side dish for any Mexican meal, they also make a fantastic bean dip. Packed with cheese, sour cream and Taco seasonings, there’s not a tortilla chip around that wouldn’t want to get dipped into these beans!

Lets’ get dinner in the oven so we can eat!!!

Start by preheating your oven to 375°F.

Brown ground beef in a large skillet over medium heat, breaking it into small crumbles as it cooks. Drain off any excess fat.

Add Cumin to the ground beef.

Stir in the can of diced green chilies.

Add the salsa to the skillet and stir to combine. 

Add red enchilada sauce to the skillet and stir to combine. Remove from heat.

Place slightly crushed tortilla chips in a large mixing bowl.

Add the beef mixture to the tortilla chips in the mixing bowl.

Add half the shredded Cheddar and Jack cheeses to the bowl.

Stir to combine all the ingredients and completely coat the tortilla chips with the sauce, meat and cheese mixture.

Grease a 13 X 9 inch casserole dish with non-stick cooking spray.

Transfer the meat/tortilla chip/cheese filling into the prepared casserole dish and smooth out the filling into an even layer.

Top with the remaining cheeses. 

Sprinkle evenly with sliced black olives.

Cover the casserole dish with foil.

Bake for 50 minutes. Remove foil and set oven temperature to “broil”.

Broil until cheese is melted and bubbly and just barely beginning to brown along the edges.

Top each serving with a dollop of sour cream and dig in!!! This is so freaking good!!!

Ingredients
  

  • 1 lb ground beef
  • 11 oz bag Tortilla chips, slightly crushed
  • cups Cheddar cheese, shredded
  • cups Monterey Jack cheese, shredded
  • 28 oz can of red Enchilada sauce
  • 4 oz can of diced green chilies
  • ½ tsp Cumin
  • ½ cup salsa
  • 2.25 oz can of sliced black olives, drained
  • ½ cup sour cream, to serve
