How To Make The Best Restaurant Style Spanish Rice

Is a Mexican meal really complete without a side of Spanish rice? Sadly many recipes I’ve tried just don’t measure up. They are often mushy, sticky, and unappetizing. They require too many ingredients, or there’s a long complicated list of instructions. My hunt for a tasty, easy to prepare Spanish rice recipe began many years ago and after many failed attempts this recipe has become our favorite! It’s easy to make and the perfect compliment to any Mexican meal you are serving. It has a light mellow flavor, it’s not too overpowering, and comes out nice and fluffy, not mushy.

One of the best things about this recipe, is that it uses simple, everyday ingredients that you are sure to have hanging out in your pantry.

To start heat oil in a large saucepan over medium heat. When the oil is hot, add the rice. Cook, stirring occasionally, until grains are translucent and start to lightly toast.

Did you know: For best results when cooking rice, remember the magic ratio; two cups of liquid to every one cup of uncooked rice will produce light, fluffy cooked rice every time. Cook over lowest heat setting and resist the temptation to lift the lid and peek for doneness.

Add the remaining ingredients, and stir well.

Increase heat to high and bring the mixture to a boil.

Stir and cover pan with a tight fitting lid; immediately reduce heat to lowest setting.

Cook for 20-25 minutes or until rice has absorbed all the liquid. Resist the urge to lift the lid and take a peek as it cooks. Wait until rice has cooked for at least 20 minutes before checking it to see if it has absorbed all the liquid.

TIP: Rice is a very forgiving side. Once the rice is cooked, remove the pan from heat and keep it covered. Rice will stay warm for up to 20-30 minutes while you finish up other dishes.

To serve, fluff rice with a fork to separate the grains.

Ingredients
  

  • 1 tbsp vegetable oil
  • 1 cup long grain rice
  • 14½ oz can of chicken broth,
  • oz water
  • 8 oz can tomato sauce
  • 1 tsp garlic powder
  • ½ tsp Cumin
  • 2 tbsps minced dehydrated onions
  • tbsp taco seasoning mix 

Instructions
 

  • Heat oil in a large saucepan on medium high heat.
  • Add rice and stir until grains are translucent and start to lightly toast.
  • Add all the remaining ingredients, and stir well.
  • Increase heat to high and bring mixture to a boil, stirring occasionally.
  • Cover pan with a tight fitting lid; immediately reduce heat to low.
  • Cook for 25-30 minutes or until rice has absorbed all the liquid.
  • Fluff with a fork and serve.
