Spicy Chicken Noodles

I stumbled upon this recipe on the Plain Chicken website.  Funny thing is that they used pork tenderloin instead of chicken for the recipe, LOL.  Since I didn’t have any pork tenderloin on hand I opted to use chicken breasts instead, since it was what I had in the fridge.  This was a surprisingly simple meal to put together and it received 2 thumbs up from my family.  My son slurped it up and said he really liked it!  Quick and easy to prepare, tasty and flavorful, and family approved; I would call this a winner, winner chicken dinner!

Alrighty then, let’s get this party started! Open the 2 packages of Ramen noodles and discard the flavor packets, you won’t be needing them for this recipe. First thing is to get a pot of water boiling on the stove and get those noodles cooking.

You can boil the noodles in the microwave if you prefer, either method gets the job done.  Drain them after they are cooked.

TIP:  I like to break up the noodles a little.  I place the package on the counter and using my fist, bang on the package before I open them up.  You can skip doing this if you want, but it makes it easier and less messy to eat.

Once you have the noodles going it’s time to get the chicken going.

Heat about 2 tablespoons oil in a large skillet.  While the oil is heating up slice the chicken breasts into thin strips, about a ¼ inch thick.

Add the sliced chicken to the skillet and cook, stirring frequently, until it just starts to brown.  The chicken will cook quickly since it’s sliced so thinly.

Next add the brown sugar, Soy sauce and Chili Garlic sauce to the pan.

Reduce the heat a little and stir often.  The goal is to get the sauce to thicken and reduce.  You want the sugar to caramelize and create that delicious sticky glaze, like you get when you eat at a Chinese food restaurant.  It will only take a few minutes, so be sure to keep an eye on it and keep things moving around in the pan so the sugar doesn’t burn on you.

Once the sauce has caramelized and thickened add the cooked noodles and stir to combine and coat them with the caramelized sauce.

Serve with a sprinkle of sliced green onions and wait for the compliments to come pouring in from your family. I promise you that you won’t have to wait very long.  This is surprisingly flavorful dish for something that is so quick and easy to prepare and uses so few ingredients!   

Spicy Chicken Noodles

  • 1 lb. (about 2 large) boneless, skinless chicken breasts, thinly sliced
  • 2 Tbsps. oil
  • 1/4 cup brown sugar
  • 1/2 cup soy sauce 
  • 2 Tbsps chili garlic sauce
  • 2 (3-oz) packages ramen noodles, any flavor
  • green onions, sliced, for garnish

Open ramen noodles and discard flavor packets.

Cook ramen noodles in boiling water for 3 minutes, or microwave. Drain and set aside.

While the noodles are cooking, heat oil over medium-high heat in a large skillet.

Once the oil is hot, add the sliced chicken and cook until it starts to brown. 

Stir in the brown sugar, soy sauce and chili garlic sauce.

Reduce heat simmer for 5 minutes.  You want to reduce the sauce a bit and get the sugar to caramelize.

Remove the skillet from the heat and stir in the cooked noodles, toss well to coat with the sauce.

Top each serving with green onions.
