Tamale Pie

This recipe comes courtesy of the recipe book Delish. I picked up a copy at the library and it was filled with page after page of delicious looking recipes. I had a hard time picking just one recipe to try first.

This Tamale Pie was noted as a favorite of the Delish staff and since Cinco de Mayo is only a few days away I decided now was the perfect time to give this recipe a try.

It comes together easily and it was very tasty! Using the cornbread as a crust instead of a topping was a brilliant idea! In all it took about an hour, from start to finish, to get this dish on the table.

If I have any complaints about the recipe it would be that it calls for only 1/2 cup of enchilada sauce and 1/2 a cup of creamed corn. What to do with the remaining enchilada sauce and remaining creamed corn in the cans? I hate wasting food. 😕 I added the extra enchilada sauce to the beef mixture as it cooked and used the entire can of creamed corn with the cornbread mix eliminating any waste. 🙂

I would have liked more spice as well. The next time I make this dish I will use an envelope of taco seasoning mix to up the flavor. We topped our servings with a dollop of sour cream but I think topping each serving with some crisp shredded iceberg lettuce and chopped tomatoes would be a really nice addition.

Start by preheating oven to 400° F. Spray a large casserole dish with non-stick cooking spray. Set aside.

In a large bowl, combine corn muffin mix, egg, sour cream and creamed corn until well mixed together.

Pour batter into prepared baking dish and bake for 20 minutes, until golden brown.

Remove from oven and allow to cool.

In a large skillet over medium heat sautee onion in vegetable oil until soft. Add cumin, chili powder, salt and pepper taco seasoning mix and stir to combine.

Add ground beef, 1/2 the enchilada sauce and minced garlic breaking up the beef with a wooden spoon as it cooks. Cook until beef is cooked through and sauce has thickened. Drain off any excess fat.

Using a fork prick the baked cornbread crust in the baking dish. 

Spread remaining 1/2 of enchilada sauce evenly over the baked cornbread.

Spread the cooked ground beef mixture over the cornbread crust.

Top with shredded cheeses.

You can never have too much cheese!

Cover casserole dish with foil and bake for 20 minutes.

Remove foil and set oven temperature to broil.  Broil until cheese is melted and golden brown along the edges.

Top each serving with shredded lettuce, chopped tomato and sour cream if desired.

My teenager loved this meal!

  • cooking spray
  • 1 box Jiffy corn muffin mix
  • 1 egg
  • ½ cup sour cream
  • 1 can creamed corn
  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 1 envelope taco seasoning mix
  • 2 cloves garlic, minced
  • 1 lb ground beef
  • 10 oz red enchilada sauce
  • 1 cup cheddar cheese, shredded
  • 1 cup monterey jack cheese, shredded
  • shredded lettuce, optional
  • chopped tomato, optional
  • sour cream, optional

Instructions

  • Add ground beef and minced garlic breaking up the beef with a wooden spoon as it cooks. Drain off excess fat.
  • Stir in ½ of the enchilada sauce and cook until meat and sauce has thickened. Remove from heat.
  • Using a fork prick the entire surface of the baked cornbread crust in the baking dish.
  • Spread the remaining ½ of the enchilada sauce evenly over the cornbread.
  • Spread the ground beef mixture over the cornbread crust.
  • Top with shredded cheeses.
  • Cover casserole dish with foil and bake for 20 minutes.
  • Remove foil and set oven temperature to broil.
  • Broil until cheese is melted and golden brown along the edges.
  • Top each serving with shredded lettuce, chopped tomato and sour cream.
