The Best Method For Making Cheddar Scallion Biscuits

Biscuits…how I love them! Do you love the Cheddar Bay Biscuits that are served up at a famous seafood chain restaurant? I usually eat way too many of them before my meal even arrives. I usually end up having to take most of my meal home as leftovers. Sound familiar? Those biscuits are cheesy, soft, fluffy and utterly delectable. I can easily eat a truckload of them. What about you?

I’ve tired several copycat recipes, and while most of them are pretty good none of them compare to the ones I love at my favorite seafood restaurant. Then I came across this recipe. They aren’t drop biscuits instead they have layers of luscious cheese and scallions sandwiched in between layers of soft fluffy, light as air dough…oh my!

If you are a biscuit aficionado, you are going to love these cheesy, scallion biscuits! Not only are they over the moon delicious, but they are oh so easy to make too. How awesome is that? That means you can make them whenever the mood strikes, which is going to be all the freaking time!!!

I have to give a big shout out to Chef John at allrecipes.com for this delicious recipe! The technique he describes makes these biscuits flakey, soft, tender and utterly delectable!!! They literally melt in your mouth!

Let’s get going on this recipe so we can shove these in our face!!!

Start by shredding some sharp cheddar cheese and slicing up green onions.

Gather together the remaining ingredients.

Preheat oven to 400°F.

Place flour, baking powder, baking soda, and salt in a large mixing bowl.

Add cold butter and using a pastry cutter cut butter into the flour mixture until it resembles coarse sand.

Make a well in the center of the flour/butter mixture and add the buttermilk.

Stir mixture together until a shaggy dough starts to form.

A danish dough whisk is perfect for this.

Place the dough onto a lightly floured work surface.

It looks like a hot mess at this point. Don’t worry, it will come together.

Pat dough into a rectangular shape about ½ inch thick. You can use a rolling pin for this. 

Sprinkle ½ the shredded cheese and green onions onto the surface of the dough.

Using a dough scraper, fold the dough into thirds.

Roll out to ½ inch thickness, using a rolling pin.

Sprinkle the remaining cheese and green onions onto the dough.

Using a dough scraper, fold the dough into thirds again and roll out to ½ inch thick square with a rolling pin.

Cut square into 9 biscuits with the dough scraper.

Place biscuits on a cookie sheet.

See those layers? That is what makes this biscuits light, flaky and delicious.

Baste biscuits with buttermilk.

Sprinkle each biscuit with about a teaspoon of shredded cheese.

Bake biscuits in 400 degree preheated oven until light golden brown, about 20 minutes.

Perfection!!!

Transfer biscuits to a wire rack to cool.

This technique of folding the dough to sandwich the cheese and scallions in between the layers of dough produces tender, flakey biscuits with fluffy layers of dough with cheese and scallions. This technique produces a much better biscuit than just mixing the cheese and scallions directly into the dough.

These are great with…well… just about anything you are serving for dinner!!!

Ingredients
  

  • 2 cups flour
  • 3 tsp baking powder
  • ½ tsp salt

  • 7 tbsp very cold butter, cut into slices
  • ¾ cup buttermilk, plus more for brushing
  • ½ cup shredded sharp cheddar cheese, plus more for on top
  • ¼ cup green onions, sliced

Instructions
 

  • Preheat oven to 400°F.

  • Cut out 9 square biscuits with the dough scraper.
  • Place biscuits on a cookie sheet and baste with buttermilk. Sprinkle each biscuit with about a teaspoon of the remaining shredded cheese.
  • Bake biscuits until light golden brown and cheese is bubbly and melted, about 20 minutes.
  • Transfer biscuits to a wire rack to cool.
