A huge shout out to my bestie Cindy, for this absolutely FABULOUS recipe. Not only is it an extremely healthy meal but you can get it on the table in just 20 quick minutes. Let’s face it, we could all use more healthy meal options in our dinner rotation. This meal is not only a healthy meal you can feel good about serving your family, but it’s a great easy meal you can get on the table on those nights when you just don’t have the energy or desire to spend a lot of time in the kitchen cooking dinner. You can whip up these tacos in less time than it takes to get through the drive thru. So skip the drive thru and whip these tacos up instead!
Jump to RecipeThese fish tacos are packed with flavorful, healthy veggies in every single bite. Just look at all the colorful ingredients that make these tacos oh so very tasty!
Start by chopping the onion, tomatoes, and cilantro. Shred the cabbage, crumble the Cotija cheese, and dice the avocado. Cut the lime into wedges. I used a lemon because I didn’t have a lime. Set aside.
TIP: Set out all the toppings and let everyone assemble their own tacos. Not only is this less work for you but everyone can add the toppings they enjoy the most.
Season tilapia fillets with taco seasoning. I used tilapia fillets because of their mild flavor but you could use any white fish like cod or haddock. You could also substitute with salmon if you are a fan.
Heat olive oil in a skillet over medium heat.
Cook seasoned fish fillets for 2 minutes per side or until fillets are opaque and cooked through.
Be careful not to overcook the fish. Keep a close eye on it and cook it just until it turns opaque so it remains tender and moist. Ain’t nobody likes dry, overcooked fish.
Warm tortillas in a dry skillet or in the microwave until they are soft and pliable.
Place a grilled fish fillet in each warmed tortilla and top with all your favorite taco toppings.
OMGosh!!! These were sooooo good! Even my teenager that loves a beef taco wolfed down two big tacos and topped them with loads of veggies. He snarfed them down before I could even finish my first taco. Hubs was happy because he adores fish and often complains that I don’t cook fish often enough. I think I just found the perfect recipe to get more fish in our diet. Everybody was happy with dinner tonight. Thank you Cindy for this fabulous recipe! Love you girl!
Grilled Fish Tacos
Ingredients
- 16 oz tilapia fillets
- 2 tsp taco seasoning
- 2 tbsp olive oil
- 6 corn tortillas
- 1 cup green cabbage, shredded
- 1 cup tomatoes, chopped
- ½ cup onion, chopped
- 1 bunch cilantro, chopped
- 1 cup Cotija cheeese, crumbled
- 1 large Avocado, diced
- 1 lime or lemon, cut into wedges
- ½ cup sour cream
- salsa or hot sauce
Instructions
- Chop onion, tomatoes, and cilantro. Set aside.
