A Flavor Packed, Quick & Easy, Chorizo Breakfast Hash

I have a confession to make. Even though I love to cook, there are days when I’m just not much in the mood for cooking up a meal, much less a fancy meal. Shocking for a food blogger, I know, right? But let’s be honest, we all have those days. That’s when it’s great to have a recipe like this one in your arsenal. A home made, cooked from scratch meal that comes together in just a few short minutes that’s packed with delicious flavor. Yes such a meal does exist, and this is it!

This is one of my favorite weekend breakfasts to serve up. It fills your belly, giving you a great start to your day for tackling all those weekend projects on your “To Do” list. It’s also a great weeknight, quick and easy meal that you can get on the table in under 30 minutes. It’s one of my favorite “Breakfast for Dinner” meals. It’s flavorful, hearty and easy to make…gotta love that.

Because this recipe uses so few ingredients, the key to a great Chorizo hash is the star of this meal, the Chorizo sausage. Because of my Hungarian background, I have to confess, I’m kind of a sausage snob. When you grow up watching your parents and aunt and uncle make homemade bratwurst sausages from scratch you know the difference between a really great sausage and a ho-hum, run of the mill store bought sausage. For the best results, be sure to use a good quality Chorizo for this recipe for the best flavor.

Start by heating a tablespoon of vegetable oil in a pan over medium heat. Add a pound of good quality Chorizo sausage to the pan, breaking it up with a wooden spoon until you have small crumbles. Drain off any excess fat leaving about 1 tablespoon in the pan. 

While the Chorizo is cooking in the pan, dice up the onion, and peel and dice the potatoes.

Remove the cooked sausage crumbles from the pan and set them aside. Add the diced onion and cubed potatoes to the pan. 

Cook, stirring occasionally until the potatoes are fork tender and the onions are soft and beginning to brown, about 10 minutes.

Be sure to scrape up any browned bits in the bottom of the pan.

Did you know: The browned bits in the bottom of the pan is called “fond” and it’s packed with flavor. It’s “the bottom” or “the base”, the browned bits of meat and vegetables in the bottom of a skillet. Be sure to scrape it off the bottom of the pan the best you can and incorporate it into the hash for the best flavor.

Add the spices (salt, pepper, cumin, chili powder and garlic powder) to the pan.

Stir until the potatoes and onions are coated with the spices.

Return the cooked Chorizo sausage to the pan.

Stir to combine the Chorizo with the seasoned onions and potatoes, continue scraping up the browned bits in the bottom of the pan and everything is heated through, about 2-3 minutes.

Top the hash with a layer of shredded cheddar cheese.

Turn off the heat, cover the pan with a lid and let it sit, covered for about 5 minutes, to allow the cheddar cheese to melt.

Optional Serving Suggestion: Top each serving with a poached egg or an over easy cooked egg. Fry up the eggs in a little butter in a separate pan while the cheese is getting all soft and melty.

Top each serving with a dollop of sour cream if desired.

Confession: I make this meal a lot!!! It’s just so darn good and so easy to make!

Oh my goodness, is this a good meal!!! It’s hearty, filling, cheesy, and packed with amazing flavor from the Chorizo sausage. Try this hash topped with either a poached egg or an over easy fried egg. When you break open that soft egg yolk and it runs down over your plate of hash…you will literally think you have died and gone to hash heaven. Ingredients
  

  • 1 lb Chorizo sausage, casings removed
  • 1 tbsp vegetable oil
  • 3-4 potatoes, cut into 1 inch cubes
  • 1 medium onion, diced
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp pepper
  • cups cheddar cheese, shredded
  • ½ cup sour cream, optional

Instructions
 

  • Heat vegetable oil in a large skillet over medium heat.
  • Add Chorizo sausage to the pan and cook, breaking up the sausage into small crumbles with a wooden spoon until cooked through. Drain off any excess fat leaving about 1 tablespoon in the pan.

  • Top with a layer of shredded cheddar cheese.

  • Top each serving with a dollop of sour cream.
