An Easy To Make Delightful Cinnamon Bread

One of my favorite flavor profiles is cinnamon and sugar, and this lovely loaf delivers loads of it! It’s very similar to a Banana Bread, minus the bananas. It’s moist and tender and not too sweet. The cinnamon is definitely the star of the show.

This loaf is delicious warm from the oven but it’s equally delicious toasted and topped with some creamy butter. It’s a fabulous breakfast treat with a hot cup of coffee or a tall glass of milk!

It takes only 15 minutes to get it in the oven, then all that’s needed is some patience while it bakes and fills your kitchen with it’s divine cinnamon-y scent…drool! The delicious aroma of this loaf baking even drew my teenager out of his room, which is no small feat!

Start by preheating oven to 350° F. Generously grease and flour a 9 x 5 inch loaf pan. Set aside.

In a medium mixing bowl combine dry ingredients; flour, sugar, baking soda, baking powder, salt and 1 tablespoon cinnamon. Set aside.

In a small bowl whisk together the milk and lemon juice and let it stand for 5 minutes to allow it to thicken. 

Combine lemon/milk with vegetable oil, vanilla and eggs. Stir to combine.

Add the wet ingredients to the dry ingredients.

Stir just until incorporated.

In small measuring cup stir together the brown sugar, 1½ tablespoons cinnamon and the melted butter.  

Pour half of the batter into the prepared loaf pan. 

Plop half the cinnamon sugar mixture by spoonfuls evenly onto the batter.

Use a skewer or toothpick to swirl the cinnamon mixture into the batter making “S” or “figure 8” shapes.

Repeat with the remaining batter and cinnamon/sugar mixture. 

Swirl cinnamon/butter into the batter with the end of a skewer or toothpick. Making “S” or “figure 8” shapes.

Bake loaf for 70-80 minutes, start checking for doneness after 60 minutes. Loaf is done when a toothpick inserted in the center comes out clean. 

Remove loaf pan from oven and cool on a rack for 5 minutes. 

Remove loaf from the pan and allow to cool completely.

This bread is delicious lightly toasted and served with butter.

No need to top this with cinnamon & sugar, it’s baked right into the loaf.
