Bean Tostadas, A Left Over, Make Over Marvel

Every time we have a taco Tuesday we invariably end up with leftover refried beans. What to do with them? Well this tasty leftover makeover recipe is the perfect way to use up those leftover refried beans as well as any other leftover taco fixings you may have. It’s a fabulous way to transform ingredients into a meal that’s just as delicious for round two.

This meal comes together lickity split. That means you can have a tasty meal on the table in just a few quick minutes. Gotta love that!

Start by heating refried beans either in the oven, the microwave, or on the stovetop until warm. 

Instead of plain refried beans, make them extra tasty by adding just a few ingredients. Try one of my all time favorite recipes Monster Mash Refried Beans for a tasty side that’s perfect to serve with all your Mexican meals. It’s also terrific as a bean dip served with tortilla chips. Any leftovers, if you have them, are the perfect base for these tostadas!

Heat about ¼ inch of vegetable oil in a skillet over medium high heat. Fry corn tortillas until crisp, about 2 minutes per side.

Fry tortillas until nice and crisp.

Place fried tortillas on a paper towel lined plate to drain off excess fat.

Assemble Tostadas:

Spread about a ⅓ cup of refried beans onto tortilla.

Top with a layer of shredded cheese.

Add shredded lettuce.

Next add sour cream, and hot sauce. 

Top with chopped tomatoes, green onions, sliced olives and chopped cilantro. 

Even my picky teenager who always turns up his nose to beans loved these tostadas. Quick, easy, and tasty; leftovers don’t get much better than this!

Ingredients
  

  • vegetable oil, for frying
  • 6-8 corn tortillas
  • 1-2 cups refried beans
  • 1 cup cheddar cheese, shredded
  • 1 cup lettuce, shredded
  • 1 tomato, diced
  • ½ cup sour cream
  • 2-3 green onions, sliced
  • 2 tbsp cilantro, roughly chopped
  • ¼ cup sliced black olives, optional
  • 2 tbsp hot sauce

Instructions
