Capture Summer In A Bowl; Easy To Make Caprese Salad

For many of us, summer is synonymous with garden grown fresh tomatoes. Honestly, is there anything more delicious than freshly picked, vine ripened tomatoes? Store bought tomatoes can’t even come close in juiciness, texture, or sweetness! One of summer’s simple pleasures is eating those ruby red jewels in this delectable salad just minutes after picking them off the vine.

It doesn’t get much fresher than this!

Don’t have fresh tomatoes growing in the garden? Don’t despair. Check your local farmers market for vine ripened organic tomatoes.

My teenager won’t eat salads. I know…crazy! I suspect his Dad must have dropped him on his head when he was a baby…LOL! He says lettuce tastes like grass. Not sure I want to find out how he knows what grass tastes like either…ha-ha-ha. But all is not lost, he will actually eat this Caprese salad. There’s no lettuce in this delectable side dish.

It’s packed with vitamins and it’s oh so good for you! It’s the perfect flavorful side dish for all your summer meals! You will never complain about what to do with all those tomatoes coming from your garden!

To make this quick, tasty salad, start by washing and cutting tomatoes in half. If using larger tomatoes, just cut them into bite sized chunks.

Cutting them in half allows the balsamic vinegar to get in there.

Place cut tomatoes in a mixing bowl.

Add Mozzarella cheese balls. You could also cut up a large ball of fresh Mozzarella cheese if you can’t find these smaller cheese balls.

Chiffonade fresh basil leaves and add it to the mixing bowl. 

To Chiffonade is just a fancy word for thinly slicing the basil. It’s very, very easy to Chiffonade basil. Create a stack of basil leaves on your cutting board and roll them into a log.

Then thinly slice across the basil log creating thin strips. That’s all there is to it. Voila, you can now add Chiffonade to your repertoire of cooking skills!

Use fresh basil for this salad!

Add Balsamic vinegar to the bowl.

Drizzle with olive oil.

Add freshly cracked pepper and a sprinkle of salt to taste. Toss to combine.

We like it peppery!

Serve immediately.

This is my kinda summertime meal!

Here in Northern California we get days when it’s just too stinking hot to spend time in the kitchen over the stove cooking a meal. Caprese Salad

Fresh, simple ingredients come together in this simple to make salad that captures the best flavors of summer in your bowl.

Ingredients
  

  • 16 oz cherry tomatoes, cut in half
  • 4 oz fresh Mozzarella cheese balls
  • 1 tbsp basil leaves, chiffonade
  • 2-3 tbsp good quality extra virgin olive oil
  • 2-3 tbsp Balsamic vinegar
  • freshly cracked pepper
  • salt, to taste
  • Freshly grated Parmesan cheese, optional

Instructions
 

  • Wash, cut tomatoes in half, and place them in a mixing bowl.
  • Add Mozzarella balls.
  • Chiffonade basil and add to the mixing bowl.
  • Add Balsamic vinegar to the bowl.
  • Drizzle with olive oil.
  • Add freshly cracked pepper and salt to taste.
  • Toss to combine.
  • Serve immediately.
  • Top with freshly grated Parmesan cheese if desired.
