A Tangy, Tasty, Easy To Prepare Chinese Chicken Salad

The heat is on! Light, refreshing, flavorful meals sound most appealing when the summer temps climb to unbearable heights up into the triple digits. Yes, I know it’s a dry heat where we live. But honestly, when temperatures hit the triple digits and it feels like you opened the oven door when you step outside, it’s just plain hot!

Time for some refreshing sun tea and a salad for dinner.

I love making sun tea during the hot summer months.

A few years back a co-worker of mine, Kristi, brought this delicious salad to a potluck. As I went down the line I took a small portion of her salad along with a little bit of the various other dishes that looked appealing. One taste of this flavorful salad and I knew I had to go back for a supersized second helping!

This is a flavorful, crisp, refreshing salad with a flavor packed dressing. You know when you have a sweet and savory, tangy dressing that gets your mouth watering? Yep, this is one of those salads. You must give this one a try!!!

The crispy lettuce, coupled with the crunchy wonton strips is a terrific base for the asian inspired dressing that has a tang that is perfect and not overpowering.

Ok, I don’t know about you, but I’m hungry. Let’s get this salad made so we can enjoy it sooner, rather than later!

Start by cutting a head of lettuce into quarters, remove core and slice into strips. Place in a large bowl.

Add green onions and red bell peppers. Kristi’s recipe doesn’t call for the red bell peppers, but I love the crunchy sweetness they bring to the party.

Top with almonds, green onions, wonton strips and shredded chicken.

TIP: You can usually find wonton strips at the grocery store on the shelves next to the croutons in the salad dressing aisle.

You can use rotisserie chicken or cook chicken breasts with chicken broth in a slow cooker. Either will work with this recipe, just use whatever you have on hand.

Mix together dressing ingredients, rice wine vinegar, sugar, vegetable oil, sesame oil and Hoisin sauce.

Make the dressing in a glass jar. Just screw on the lid and shake the jar vigorously until all the ingredients are well combined.

How easy was that? Super easy!!! Plus, this dressing is so much tastier than anything you can buy in a bottle.

That’s a jar full of fantastic flavor!

Pour dressing over the salad ingredients in the bowl and toss to combine.

Serve immediately after tossing the salad with the dressing.

Top with chopped cilantro if desired. I desired cilantro, I adore cilantro, I add it to everything! I always have it on hand. Except today, I didn’t have any to add, I was so sad.

That’s it! Easy peasy! Time to shove some in my face!

Chinese Chicken Salad

The sweet and savory dressing is packed with flavor making this the perfect light asian inspired meal when the temps rise.

Ingredients
  

For the Salad:

  • 3 boneless, skinless chicken breasts, cooked and shredded
  • 1 pkg fried wonton strips
  • 1 head iceburg lettuce, sliced sliced
  • 1 bunch green onions, sliced
  • ½ red bell pepper, thinly sliced
  • ¼ cup roasted almonds, roughly chopped
  • 2 tbsp Cilantro, chopped

Dressing:

  • 4 tbsp rice wine vinegar
  • 4 tbsp sugar
  • ½ cup vegetable oil
  • 2 tbsp sesame oil
  • 1 tbsp Hoisin sauce

Instructions
 

  • Place lettuce, shredded chicken, fried wonton strips, sliced almonds, red bell pepper and green onions in a large bowl.
  • In a jar combine rice wine vinegar, sugar, vegetable oil, sesame oil and hoisin sauce.
  • Screw on lid and shake vigorously to combine.
  • Pour dressing over salad and toss well.
  • Top with cilantro.
  • Serve immediatly.

Notes

TIP:  Add dressing when ready to serve so that lettuce doesn’t wilt.
