An iconic southern favorite! If someone mentions comfort food, this is probably one of the top 3 on the list. Fluffy biscuits smothered in a sausage gravy, life doesn’t get much better than that!
You can easily use refrigerated biscuit dough to make this, no judgement from me. I baked up refrigerated biscuits for years. I always thought making biscuits was a complicated involved process. They are actually very simple to make from scratch, and take only a few minutes to get into the oven.
I highly recommend taking a few extra minutes to make your own fluffy biscuits from scratch. It is so worth it! It takes an ok meal and turns it into an outstanding, crave worthy comfort food meal.
Once you get the biscuits in the oven you have plenty of time to make the sausage gravy to smother them in!
Start by browning a chub of breakfast sausage in a skillet over medium heat. Use a spatula to break up the meat as it cooks.
Once the meat is cooked through add about 3-4 tablespoons of flour to the cooked pork sausage in the pan. Use a tablespoon and sprinkle the flour as evenly as you can over the surface of the cooked pork in the pan.
Add between 1/2 cup to 3/4 milk to the skillet.
Stir the milk and flour together with the pork to combine. If the mixture seems too thick, add more milk.
Allow mixture to thicken over low heat.
Serve sausage gravy over freshly baked biscuits with a side of scrambled eggs to round out the meal. Top with freshly cracked black pepper.

Ingredients
For sausage gravy:
- 12 oz pork breakfast sausage
- 3-4 tbsp flour
- ½-¾ cup milk
- Freshly ground pepper
Instructions
Prepare your favorite biscuits and get them in the oven.
Prepare sausage gravy while biscuits are baking in the oven.
- Place pork sausage in a skillet over medium heat. Use a spatula to break up meat as it browns.
- Once the sausage is cook through, sprinkle flour as evenly as possible over the pork in the skillet.
- Add milk and stir together with the cooked sausage and flour. If mixture is too thick, add addtional milk.
- Lower heat and cook until milk is heated through and gravy thickens to desired consistency.
- Ladle gravy over freshly baked biscuits.
- Serve with a side of scrambled eggs to round out the meal.
