Crave Worthy Cornbread

I adore cornbread but not the dry as sawdust kind, nor do I like it overly sweet. This easy recipe takes a humble box of Jiffy corn muffin mix and turns it into a moist mouthwatering treat.

If you don’t live in the states and can’t find the Jiffy corn muffin mix at your local market you can easily purchase it on Amazon here. Isn’t it fabulous how easy it is to find items on Amazon that we could never get our hands on before the internet? Sometimes technology is fabulous!

If you follow the directions on the box you get an ok cornbread, but in my opinion it turns out much to dry. I knew I could improve it with the addition of a couple of ingredients to add moisture and enhance the flavor.

Adding just 5 ingredients to the mix improved it 100%. The addition of sour cream improved the moistness and adding just a small amount of sugar really enhanced the flavor without making it overly sweet.

To make the cornbread, combine 1 box Jiffy corn muffin mix with 1 egg, 1/3 cup milk, 1/2 cup sour cream, 1/4 cup vegetable oil, and 1 tablespoon sugar.

Mix all the ingredients together in a medium size mixing bowl until well combined.

Pour batter into a greased loaf pan.

Bake for 25-30 minutes in a 400 degree oven or until a toothpick inserted in the middle comes away clean.

Cut into generous sized squares and serve with softened butter.

Can you see how moist this is?

It’s that easy! I confess I had more than one piece. Ok I had more than two pieces; I had three slathered with butter. Oh my, it was so good!

  • 1 8.5 oz box Jiffy Corn Muffin Mix
  • 1 egg
  • 1/3 cup milk

  • 1 tbsp sugar

Instructions
 

  • Preheat oven to 400 degrees.
  • Grease a 9-inch loaf pan with non-stick cooking spray.
  • Mix all ingredients together in a medium size mixing bowl until well combined.
  • Pour batter into the greased loaf pan.
  • Bake for 25-30 minutes or until a toothpick inserted in the middle comes away clean.
  • Cut into squares and serve with softened butter.
