Easier Than Hitting The Drive-Thru, Copycat Taco Bell Mexi-Melts

Back in the day I was known to hit up the local Taco Bell at least 3 or 4 times a week. Mexi-Melts were one of my all time favs! My best friend in high school worked there and she made sure my order was good and meaty and extra, extra cheesy.

Making these at home is easier than getting in the car to pick them up in the drive thru. Plus when you make them at home, you can make sure they are super meaty and extra, extra cheesy just the way you like them. The beauty of making them at home is you will know exactly what’s in them. No preservatives, or unpronounceable chemical additives, just a beefy, cheesy roll of deliciousness!

Is this enough cheese? Maybe. Might need some more…LOL.

Start by browning a pound of ground beef over medium heat in a large skillet.

Break up the meat into small crumbles as it cooks.

Once meat is cooked through and nicely browned, spoon off and discard any excess fat.

Add tomato sauce and water to the skillet.

Add taco seasoning mix and stir to combine.

Increase heat slightly and bring the beef mixture to a simmer.

Simmer, stirring occasionally, about 5 minutes, until all the excess liquid has cooked off and you have a thick meat mixture, similar to the consistency of a thick chili.

It’s time to assemble these babies!

Place a flour tortilla on a smooth work surface and add about 1/2 cup of grated cheese to each tortilla. Or more, no judgement!

Spoon on some taco sauce. If you like it spicy add a lot. Like it mild? Add just a little.

Add a generous heaping of the taco seasoned beef to the tortilla.

Top with more shredded cheese.

Roll up each tortilla to enclose the filling. Be sure to fold in the ends so the filling doesn’t leak out.

Almost done.

Wrap that little lovely in a paper towel and microwave on high for 30 seconds to 1 minute or until cheese has completely melted.

DIG IN!!!!!

Serve with a side of sour cream if desired.

It’s amazing how something so easy with just a few basic ingredients can produce something so utterly delicious!!! I know this is a copycat recipe, but in my humble opinion this is better than the original from Taco Bell, unless you have a friend at Taco Bell that is willing to be heavy handed with the meat and cheese. LOL. I miss you working at Taco Bell Charlene!!! Go on and give this recipe a try, I think you will agree that not only is it easier than hitting the drive thru but this home made version tastes so much better too!!!

Taco Bell Copycat Mexi-Melts

Sometimes you just wanna indulge in a guilty pleasure. Making these at home is just as easy as getting in your car and hitting the drive thru. And you don't even need to put on your shoes!

Ingredients
  

  • 1 lb ground beef
  • 1 envelope taco seasoning mix
  • 8 oz tomato sauce
  • 8 oz water
  • 6-8 taco sized flour tortillas
  • 8 oz Pepper Jack cheese, shredded
  • Taco Bell brand hot sauce
  • sour cream, to serve

Instructions

  • Add a layer of grated cheese to each tortilla.
  • Add a generous heaping of the taco seasoned beef to each tortilla.
  • Spoon on taco sauce.
  • Top with more shredded cheese.
  • Roll up each tortilla to enclose the filling. Be sure to fold in the ends so the filling doesn't leak out.
  • Wrap each Meximelt in a damp paper towel.
  • Microwave 2 Meximelts at a time on high for 1 minute or until cheese has completely melted.
  • Serve with a side of sour cream if desired.
