Easy, Cheesy Hasselback Baked Potatoes

Potatoes are a vegetable like no other! There are probably more recipes for potatoes than there are for all the other vegetables in the world combined! My personal top three favorite way to enjoy potatoes? Either as French fries, or as creamy mashed potatoes or as a loaded baked potato topped with mounds of butter and sour cream! Then there are Potato Bites, Twice Baked Potatoes, Potato Skins, Crack Potatoes, Cheesy Bacon Roasted Potatoes…oh my, so many delicious choices, its such a dilemma!

What if you could have all three of my top favorites in one easy recipe? With melty cheese thrown in? These hasselback potatoes are not only insanely easy to make, they are insanely delicious to eat as well!!! They bake up with salty, crispy edges like your favorite french fries, with a creamy, soft center like mashed potatoes. Top them like you would a loaded baked potato and I guarantee you will be in potato heaven with each delectable potatoey bite!

LET’S MAKE SOME ALREADY!!!

Start by preheating the oven to 375°F. While oven is preheating, wash and dry potatoes. 

Cut 5-6 slits into each potato being careful not to cut them all the way through. Leave about ½ inch along the bottom of the potato intact. 

Rub potato skins with olive oil.

Sprinkle potatoes with Kosher salt.

Place prepared, sliced potatoes onto a baking sheet and bake them for 45-60 minutes or until soft.

Remove potatoes from the oven.  Use your fingers or a spoon to gently pull potato slits apart and slide a piece of cheese into each slit. The slices open up as they bake in the oven making it very easy to slide the pieces of cheese into the slits.

Return potatoes to the oven and cook for an additional 5-10 minutes or until cheese is melted.

Gooey, cheesy, goodness going on there! YUM!

Top each potato with bacon bits, a dollop of sour cream and sliced green onions to serve.

Ingredients
  

  • 4 small russet potatoes
  • 1 tsp olive oil
  • ½ tsp Kosher salt
  • 4 slices Cheddar, Jack, Provolone or Mozzarella cheese, cut into 1 inch pieces
  • 2 strips bacon, cooked and crumbled
  • 2 stalks green onions, sliced
  • 4 tbsp sour cream

Instructions
 

  • Preheat oven to 375°F.
