Easy, Peasy Three Ingredient Creamy Tomato Roasted Red Pepper Soup

Why settle for an ordinary bowl of soup when you can easily make it crave-worthy delicious? This soup comes together as quickly as it takes to heat up on the stove. Instead of just opening a can of soup and calling it good, adding a couple simple ingredients turns a packaged soup into a creamy, dreamy, delectable delight!

All you Trader Joe’s fans are really going to enjoy this recipe. If you don’t happen to have a Trader Joe’s market near you, substitute your favorite carton of tomato soup in this recipe. I always serve this soup with grilled cheese sandwiches. Dunking the sandwich in this creamy soup is OH SO GOOD!

Start by gathering together the long list of ingredients, LOL.

I’m almost embarrassed to call this a recipe…LOL!

Pour soup into a large saucepan.

Add goat cheese.

Bring soup to a simmer over medium heat, stirring occasionally.

Lower heat, simmer until cheese is completely melted and soup is smooth, creamy and heated through.

Serve with freshly ground pepper.

Top with a pinch of shredded Parmesan cheese if desired.

This recipe comes from none other than Trader Joe’s, back before COVID hit and they offered free samples and simple recipe ideas utilizing their products. I loved the free samples!!! They saved me many nights with their tasty, simple, quick meal ideas over the years. This soup is one of our favorite Trader Joe’s easy meals and it doesn’t get any simpler than this either. Using organic ingredients makes this meal not only tasty, but healthy as well. So whip up a batch of this soup the next time it’s cold and raining. Your tummy will thank you!

  • 32 oz Tomato & Roasted Red Pepper Soup
  • 5 oz goat cheese
  • freshly ground pepper
  • shredded Parmesan cheese, optional
