GENIUS…Combining Hummus & Guac To Make A Healthy Avocado Hummus

I have to confess, if given the choice between a sit down meal or an array of nibbles and finger foods, I would choose the appetizers in a heartbeat! I love to nibble and graze. I guess that’s why I was so excited when Charcuterie became such a thing! For us nibblers and grazers it was nirvana!

Two of my favs are freshly made guacamole with crispy, crunchy, salty tortilla chips for dipping and, tied for first place, rich creamy hummus with fresh, crisp, crunchy veggies for dipping. When I came across the idea of combing the two? Head blown! Why did I never think of it before?

It makes my mouth water just looking at the picture! And it’s a healthy treat!

This dip checks ALL the boxes!

It’s perfect for entertaining and everyone who tries it will be shoveling in into their faces, LOL! This one is a real winner!

Gather together the ingredients.

Place garbanzo beans, cilantro, avocados, tahini, garlic, Jalapeño pepper, seasoning mix, and salt in the bowl of a food processor and pulse to combine ingredients.

With motor running, stream in lime juice and olive oil.  Scrape down the sides of the bowl as needed.

Add water, a tablespoon at a time to thin mixture if it seems to thick. 

Serve with tortilla chips, or pita bread cut into wedges, fresh veggies such as carrots, snap peas, sliced red bell peppers, broccoli or carrots for dipping.

Wouldn’t this taste delicious slathered on a sandwich? Instead of plain avocado toast how about spreading this on a toasted slice of bread for breakfast instead? Ingredients
  

  • 15.5 oz. can of garbanzo beans, drained
  • 2 medium avocados
  • 1 jalapeño pepper, seeded and chopped
  • 2 tbsp tahini
  • 1 tsp salt
  • 1 bunch cilantro, roughly chopped
  • 1 envelope Guacamole Seasoning Mix
  • ⅓-½ cup lime juice, freshly squeezed
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 3-4 tbsp water

Dippers:

  • pita bread, cut into wedges
  • tortilla chips
  • carrot sticks
  • sliced cucumber
  • snap peas

Instructions
 

  • Place garbanzo beans, cilantro, avocados, tahini, garlic, Jalapeño pepper, seasoning mix, and salt in the bowl of a food processor and pulse to combine ingredients.
  • With motor running, stream in lime juice and olive oil.
  • Scrape down sides as needed.

Notes

Store in an airtight container in the fridge for up to 3 days.
