Green Goddess Salad; How To Make The Latest Tik-Tok Sensation

If you think healthy food can’t be delicious you haven’t tried this delectable salad! Scooping it up with tortilla chips makes it seem more like an indulgent, fun, finger food than a healthy, good for you, salad. It’s got a lovely crunch from all the veggies with an absolutely delectable, dreamy, creamy dressing. Crunchy, salty tortilla chips make it easy to shovel it up as quick as you can eat it. Once you try it you’ll understand why it’s taken the internet by storm. Everyone, and I mean everyone, is raving about it!

Start by making the salad. Remove core and shred half a head of green cabbage. Place shredded cabbage in a large bowl.

Peel and remove seeds from a cucumber. A spoon makes it quick and easy to scrape away the seeds. Dice the cucumber. Add it to the shredded cabbage.

Remove seeds from a large Jalapeño pepper. A spoon makes it quick and easy to remove the seeds. Finely mince the pepper.

Add diced jalapeño pepper to the shredded cabbage and chopped cucumber in the bowl. Set aside.

Now it’s time to make the creamy, dreamy dressing. Place roughly chopped yellow onion, green onions, avocado, almonds, garlic, Parmesan cheese, and salt in the bowl of a food processor. Pulse until smooth.

With processor running stream in the lemon juice and olive oil.

Add spinach leaves.

Process until smooth and creamy.

Toss dressing with cabbage, cucumber, and jalapeño. 

Serve with tortilla chips.

Ingredients
  

  • ½ head green cabbage, shredded
  • 1 cucumber, peeled, seeded and chopped
  • 1 large Jalapeño pepper, seeded and diced

For the dressing:

  • ½ small yellow onion
  • 5 green onions, sliced
  • 1 avocado
  • ½ cup raw almonds
  • 5 cloves garlic, peeled
  • ¼ cup grated Parmesan cheese
  • 1 tsp salt
  • 2 handfuls fresh spinach leaves
  • 1 lemon, juiced
  • ¼ cup olive oil

Serve with:

  • tortilla chips

Instructions
 

  • Place shredded cabbage, chopped cucumber, and diced jalapeño pepper in a large bowl. Set aside.
  • Place in the bowl of a food processor; yellow onion, green onions, avocado, almonds, garlic, Parmesan cheese, and salt. Process until smooth.
  • Stream in lemon juice and olive oil while processor is running.
  • Add spinach leaves. Process until smooth and creamy.
  • Taste and season with additional salt if needed.
  • Toss dressing with cabbage, cucumber, and jalapeño.
  • Serve with tortilla chips.

Notes

Store, in the fridge, covered in an airtight container, for up to 2 days.
