I have a serious love affair with gnocchi! Those little pillows of dough have a hold over me that I can’t explain. I know, I admit it, I have a serious carb problem. Dr. Atkins and Keto have no hold over me. Thank goodness for intermittent fasting.

If I can find a recipe using gnocchi, I’m all over it! This recipe has got it all going on; tasty ingredients, easy prep, and dinner is on the table in 30 minutes. Oh and did I mention…it’s freaking delicious! Carb heaven!
All right, enough drooling, let’s get this recipe going.
Dice an onion and get butter going in a large sauce pan. Cook the onion over medium heat until it’s soft and translucent.
Add the diced ham and cook until it starts to brown lightly along the edges. Oh man, it’s starting to smell good!
Once you have a bit of browning going on with the ham, add the chicken broth and the gnocchi. Stir it well and bring to a simmer. Cover and cook for about 5 minutes, or until gnocchi start to soften a bit.
Add cream, peas and salt and pepper. Stir well. Cook for a few minutes until sauce starts to thicken.
Once sauce has thickened a bit, pour gnocchi mixture into an oven safe casserole dish.
Top with a generous layer of shredded cheese and broil in the oven until cheese is melted, bubbly and starting to brown.
Serve with a loaf of freshly baked bread and your favorite veggie or green salad.
Ham & Cheese Gnocchi
- 1 tablespoon butter
- 2 cups diced onion (about 1 whole onion)
- 12 oz ham, diced
- 1 can chicken broth
- 1 (16 oz) package potato gnocchi
- 1 cup baby sweet peas, frozen
- 1/4 cup heavy cream
- Salt and pepper to taste
- 1 cup shredded cheese (Swiss, Monterey Jack, Gruyere, or Pepper Jack)
Melt the butter in a large ovenproof skillet over medium heat. Add the onions and cook until softened and translucent.
Add the ham and continue to cook until lightly browned.
Add the chicken broth and bring to a simmer.
Add the gnocchi, stir well, and cover and cook for 5 minutes until the gnocchi is tender.
Stir in the peas, cream, and plenty of salt and pepper to taste.
Sprinkle the cheese over the top and broil until golden and bubbly, about 3 minutes.
Oh man is this dish good! Be sure to serve with bread so you can mop up all the sauce in your plate!
