How To Make A Portuguese Cucumber, Tomato Salad

I was able to visit Portugal last year and I fell in love! It’s such a beautiful country. I was pleasantly surprised at all the wonderful fresh produce readily available in almost every town we visited. Amazing assortments of fresh sun ripened fruits and veggies straight from local area farms. Fresh fish and seafood caught the same day can be purchased every morning. A literal gastronomic paradise for a food blogger!

One of the most popular salads served at almost every restaurant we visited throughout Portugal is this simple cucumber, tomato salad. It’s dressed with a tangy vinegar, a good quality olive oil, and a little salt and freshly ground pepper. Just a handful of fresh, simple ingredients come together to produce one of the most flavorful, refreshing salads that will compliment just about any meal you’re serving.

To make this salad, start by slicing tomatoes, cucumber and red onion. Set aside.

Layer cucumber and tomato slices on a large platter, alternating between the two and covering the bottom of the platter.

Top with sliced red onion.

So colorful and pretty!

Drizzle with olive oil and red wine vinegar. You could also use Balsamic vinegar or a white wine vinegar as well.

Season with salt and freshly ground pepper.

Serve immediately.

This simple and easy to prepare salad brings back wonderful memories of my trip to Portugal, and it’s not only oh so pretty to the eye, but the combination of fresh flavors makes it a truly delicious salad that you can serve with all your summer meals. This traditional salad is served everywhere in Portugal. Sweet tomatoes and cool cucumbers are paired with the crisp sharpness of red onions and lightly dressed with olive oil and red wine vinegar. Perfect to serve with all your summer meals.

Ingredients
  

  • 2-3 beefsteak or plum tomatoes, sliced
  • 1 cucumber, sliced
  • 1 red onion, sliced
  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Kosher salt & freshly ground pepper, to taste

Instructions
 

  • Layer cucumber and tomato slices on a large platter.
  • Top with sliced red onion.
  • Drizzle with olive oil and red wine vinegar.
  • Season with salt and freshly ground pepper.
  • Serve immediately.
