Sherry’s Delectable Baked Egg Cups

The incredible edible egg, how do I love thee? Let me count the ways! I adore eggs in every imaginable form. Eggs can be used in endless ways to create the most delicious meals and treats. These baked egg cups are a creation that my dear friend Sherry served up at our last ladies book club gathering and they disappeared faster than you can say, “Oh my gosh these are so stinking good!” Not only are they utterly delicious, but they are ridiculously easy to make and they’re a low carb treat you can feel good about eating any time of the day. I love eggs, whether they’re fried, boiled, poached, scrambled, in a breakfast burrito, baked up in an iconic classic Quiche Lorraine, in a Ham & Cheese Croissant Bake, in a Croque Monsieur Casserole, an Egg Salad Sandwich, Deviled Eggs, or to make my Tante Elizabeth’s Green Chile Cheese Soufflé. Perhaps you’re in the mood for something sweet, like this easy to make Dutch Baby, or perhaps this delectable French Toast Casserole would fit the bill. The foods you can create using eggs are endless, and I haven’t even touched on desserts like cookies and cakes. Life would surely be a very bland existence without eggs!

How To Make Sherry’s Delectable Baked Egg Cups

This is probably one of the easiest ever ways to prepare eggs. Start by preheating the oven to 350℉.

Cook bacon until crisp. Drain on a paper towel and crumble.

Spray muffin pan with non-stick cooking spray. Using a silicone muffin pan like this one makes it easy to pop them out of the pan when they come out of the oven.

Cut deli ham in half if you have large slices.

Place a slice of ham in the bottom of each muffin cup. 

Add about a tablespoon of shredded cheddar cheese in each cup.

Crack an egg into each muffin cup, being careful not to break the yolks.

Top each egg with some bacon bits.

Season with salt and pepper. Go easy on the salt, the ham and bacon are pretty salty.

Bake at 350℉ for 10 to 15 minutes, or until eggs are cooked to your liking.

Keep an eye on them. Everyone’s oven is little different so cook time may vary a little bit. If you prefer a runny yolk start checking them for doneness after about nine or ten minutes in the oven. The longer they cook the firmer and more cooked the yolks will become. I like the yolks on the runny side but the whites must be cooked. It takes about 11 minutes to get them cooked to my liking in my oven.

Carefully remove egg cups from the muffin tin cups and serve them with a dash of hot sauce and a side of toasted bread if desired.

I love, love, love these easy to make egg cups! It takes longer to preheat the oven than it does to prepare them. No fancy ingredients needed either. Just basic items you probably have in the fridge right now, so that means no trip to the market needed. Once you get them in the oven it’s only a few short minutes until you get to sit down and gobble them up! Thank you, thank you, thank you Sherry for sharing this awesome recipe with me. Ingredients
  

  • 2 strips bacon, cooked crisp and crumbled
  • 4 slices deli ham, cut in half
  • ½ cup cheddar cheese, shredded
  • 8 large eggs
  • salt and pepper, to taste
  • hot sauce, optional

Instructions
 

  • Preheat oven to 350℉.
  • Spray muffin tin with non-stick cooking spray.
  • Cook bacon until crisp. Drain on a paper towel and crumble.
