I just love my Tante Elizabeth’s recipes. This is my cousin Rick’s all time favorite. There’s no cups of cheese in this recipe, there’s an entire pound of it! Go big or go home, right? This casserole is oh so easy to make and extra good and cheesy! I love making family favorite recipes, the ones that have been passed down for generations. Those dishes that everyone looks forward to when the family gets together. The recipe that gets requested by your family all the time. The one that you can make from memory because you’ve made it so many times. This is one of those very special dishes. My cousin Rick says it’s his all time, absolute favorite dish. I love it too! I also love how ridiculously easy it is to make using just a handful of basic ingredients. If you decide to try this recipe, I’m betting it will become one of your go-to recipes too. It’s become one of our favorites!

Cut the stick of butter into slices and place it in the bottom of a 13×9 inch casserole dish. Place casserole dish in the oven as it preheats until the butter is completely melted.
Gather together the rest of the ingredients.
Good to know: If you live in a part of the world where you can’t get your hands on a box of Bisquick, you can easily make your own. Combine 1 cup flour, 1½ teaspoons baking powder, and a ¼ teaspoon salt. Cut in 1 tablespoon butter or shortening. Recipe can easily be doubled, tripled, etc.
Shred the cheddar cheese. Yes a pound of cheese is a lot of cheese, and you will be shredding for quite a while, but freshly grated cheese melts so much better than the pre-shredded stuff. The pre-shredded stuff is usually coated in cornstarch and probably a bunch of other anti-clumping chemicals that aren’t good for you. Plus it doesn’t melt nearly as well as freshly grated cheese does. So roll up your sleeves and start shredding. Just think about how buff you’re arms are going to get shredding all that cheese…LOL!
In a large mixing bowl combine the Bisquick mix, milk, and eggs.
Whisk until lumps are mostly gone.
Add the can of diced green chiles to the batter and stir to combine.
Remove preheated casserole dish from the oven once the butter is completely melted.
Place half the cheddar cheese in the casserole dish on top of the melted butter in an even layer.
Pour the egg batter over the cheese in the casserole dish.
Top with an even layer of cheese using up the remaining half of the shredded cheddar cheese. Oh this is going to be soooooooo stinkin’ good!
Bake in preheated oven for 40 minutes until the center is cooked through and puffed and the edges are golden brown. Serve hot or at room temperature.
Oh my gosh this casserole is so stinkin’ good! No wonder my cousin loves it! All that cheese and melted butter, with the addition of fire roasted green chiles come together to produce a truly delectable soufflé. It takes just minutes to make it and it comes out of the oven piping hot for a beautiful, easy to make, delicious meal. Pair it with a side of crisp bacon or sausage links and a side of fresh fruit to round out this delectably savory, brunch meal. You must try this one for sure! You are going to love it!!! GUARANTEED!
Green Chile Cheese Soufflé
Equipment
- 13×9 inch oven safe casserole dish
Ingredients
- 1 stick butter
- 1 lb cheddar cheese, shredded
- 1 cup Bisquick baking mix
- 3 large eggs
- 2 cups milk
- 7 oz can of fire roasted diced green chiles
Instructions
- Preheat oven to 350℉.

- In a large mixing bowl combine, Bisquick, milk, and eggs.
- Stir until lumps are mostly gone.
- Add can of diced green chiles to the batter. Stir to combine.
- Remove casserole dish from the oven once the butter is melted.
- Place half the cheddar cheese in the casserole dish on top of the melted butter.
- Pour egg batter over the cheese in the casserole dish.
- Top with an even layer of cheese using remaining half of cheddar cheese.
- Bake in preheated oven for 40 minutes until center is cooked through and puffed and the edges are light golden brown.
- Serve hot.
