How To Make Tender Slow Cooker Mexican Pulled Pork

One of the best things about cooking up a pork roast in the slow cooker is that you have the makings for several Mexican meals ready to go with a minimum of effort all week long. Get the roast going in your slow cooker before heading out the door in the morning and you will be able to get dinner on the table after work in just a few quick minutes. Toss shredded pork on a bed of tortilla chips with some cheese, and pop it up in the oven till the cheese is melted. Add your favorite nacho toppings for a quick meal the whole family will enjoy. Use it in a flour tortilla with some cheese, sour cream, lettuce and tomato for a tasty, quick and easy to make burrito. Fry up some corn tortillas and you’ll have taco’s on the table in no time. Change up the flavor profile by adding some BBQ sauce to leftover meat and use it to make some savory BBQ pork sliders and no one will ever know they’re eating leftovers at the end of the week.

Place chopped onion, minced garlic, chicken broth, lime juice, orange juice, and bay leaves in the bottom of a slow cooker.

Season pork roast with salt, pepper and dried oregano. Use your hands to massage seasonings all over the surface of the roast.

Place seasoned roast in the slow cooker.

Cover and cook on low for 7-8 hours.

Remove roast from the slow cooker and shred the meat with a fork.

OPTIONAL:

  • Spread cooked shredded pork on a sheet pan in an even layer. Drizzle a little of the juices from the slow cooler over the meat.
  • Place the sheet pan in the oven. Set temperature to “Broil” and cook for 5-7 minutes or until the edges of the meat get crispy and lightly browned.

LEFT-OVER, MAKE-OVER:

Place leftover shredded pork in a saucepan.  Add enough BBQ sauce to coat the meat and cook over medium heat until heated through.  

Serve the BBQ shredded pork on your favorite rolls with a side of coleslaw or some crispy potato chips.

  • 3-4 lb bone-in, pork shoulder, roast
  • 2 tsp Kosher salt
  • 1 tsp black pepper
  • 1 tsp dried oregano
  • 1 large purple onion or yellow onion, diced
  • 6 cloves garlic, minced
  • 2 limes, juiced
  • 1 large orange, juiced
  • 14.5 oz can of chicken broth
  • 2 bay leaves

Instructions
