It’s Not St. Patrick’s Day Without This Easy To Make Slow Cooker Corned Beef

The best thing about St. Patrick’s day isn’t the green beer, although it ranks pretty high. The best thing about St. Patrick’s day is the corned beef! What’s really wonderful is not only how easy it is to make in your slow cooker, but how delicious it is with a minimum of effort.

Tender, juicy and delicious!

Corned beef is on sale right now, just in time for the holiday so you have no excuse not to give this easy method for making corned beef a try. Not only will you have the perfect easy to make meal to celebrate the holiday, the leftovers make fantastically delicious sandwiches as well!!!

This recipe couldn’t be any easier and it’s perfect for working moms! In the morning, open the package of corned beef and place the roast in your slow cooker.

Sprinkle the seasonings that come with it onto the roast.

Add enough water to the slow cooker so that the water comes about half way up the sides of the roast.

Cover and cook on high for 3-4 hours or on low for 6-7 hours.

When it’s time for dinner, remove roast from the slow cooker and slice across the grain.

That’s all there is to it! I told you this was the easiest way ever to make corned beef.

We enjoy it with a dab of Dijon mustard and a side of Braised Bavarian Cabbage. Personally I find the boiled cabbage that is traditionally served with corned beef to be flavorless and rubbery. Not a fan. I prefer to add a little German flair to our St. Patrick’s day meal with a side of my mothers recipe, Nuschi’s Bavarian Braised Cabbage.

This braised cabbage is a thousand times better than boiled cabbage!!!

Ingredients
  

  • 3 lb corned beef brisket
  • 1 cup water
  • Dijon mustard, to serve

Instructions
 

  • Place brisket in a slow cooker.
  • Sprinkle spices from the spice packet that come with the corned beef onto the roast.
  • Add enough water to the slow cooker so that it comes about half way up the sides of the roast.
  • Cook on high for 3-4 hours, or on low for 6-7 hours.
  • Slice and serve with a dollop of Dijon mustard.
