Oven Baked Parmesan Brussels Sprouts, A Delightful Easy Side

Brussels sprouts are having a big moment. You can find them on the menu at a lot of restaurants these days. Don’t keep scrolling! These are not the Brussels sprouts that you remember from your childhood. When they are cooked properly they are absolutely delicious!!!

Brussels sprouts are in season during the winter months and you can find them at almost any grocery store this time of the year. They are packed with nutrients and a recipe like this may even get your kids to give them a try.

I ask you…how can anything made with bacon not be totally yummy?

This is a great, unique, easy recipe for veggies!! Are you like me, always looking for easy and tasty recipes for veggies? This one hits both marks, it’s really tasty and it’s also very easy to make!

Not only does baking them make them a really healthy side, but baking them in the oven frees you up to make everything else you have going on for dinner. Just pull them out of the oven when they are done and dig in. It doesn’t get much easier than that!!!

Easy and nutritious…that’s a big win-win in my book!!!

Start by washing them. I rinse them with cold water in a colander.

Aren’t they pretty?

Trim off woody steams and cut them in half. Pull off tough outer leaves.

These beauties are ready to go.

Line a cookie sheet with foil and spray with nonstick cooking spray.

Preheat oven to 375 degrees.

Next, set up a “breading” station. Place grated Parmesan cheese in one bowl and beat an egg with a couple of tablespoons water in another bowl.

Dip each Brussel sprout half in the egg wash.

Then place in the Parmesan cheese to coat. Use your fingers to press the cheese onto the surface and make sure it adheres.

Place breaded Brussel halves (cut side up) on the prepared cookie sheet.

Season with freshly ground pepper.

Bake for 20-25 minutes, until lightly golden brown.

To serve, top with cooked crumbled bacon bits.

These are so stinking good!!! I served these with a drizzle of Ranch dressing. My teenage son who swears he isn’t a fan of Brussels sprouts took a dubious taste and he ended up devouring a big helping! A picky teenager enjoying Brussels sprouts? Yes it is true!!!

Ingredients
  

  • 1 lb brussels sprouts
  • 1 medium egg, beaten
  • 1 tbsp water
  • ½ cup Parmesan cheese, grated
  • Salt & pepper
  • 4 strips bacon, cooked and crumbled
  • Ranch dressing, optional

Instructions
 

  • Preheat oven to 375°F.
  • Cut brussels in half and remove tough outer leaves.
  • Line a cookie sheet with foil.
  • Set up a breading station.
  • Beat egg together with water in a bowl.
  • Place grated Parmesan cheese in another bowl.
  • Dip each brussel sprout half in the egg wash and then into the grated Parmesan cheese, to coat each brussels sprout completely.
  • Place breaded brussels sprouts on foil lined cookie sheet in a single layer.
  • Bake for 20-25 minutes until light golden brown.
  • Remove from oven and sprinkle with crumbled bacon bits.
  • Serve with a side of Ranch dressing for dipping if desired.
