If you cook for meat and potato lovers like I do, you are going to love this quick and easy to make cast iron meal! One pan means clean up is a snap, and everyone will be happy with a belly full of cheesy potatoes and savory sausage. This is probably one of my favorite meals to whip up when I haven’t been to the market in a while and I want to get dinner on the table quick. It’s an inexpensive, hearty, filling meal that my family always enjoys and I’m betting yours will too. Especially if they are meat and potato lovers like my guys are!
Jump to RecipeI like to prepare all the ingredients I need on the front end, so all I need to do is add them to the pan at the right time. Grate the cheese, slice the sausage, portion out the spices, dice the onion and red bell pepper. Peel and cut up the potato. Prep the potatoes last since they will discolor if they sit out too long.
Melt butter in a large cast iron skillet over medium heat.
I love using my cast iron skillet for this meal because it heats nice and evenly but any large heavy bottomed skillet with a lid will work for this recipe.
Add diced potatoes and cook, stirring frequently until they start to soften and brown along the edges, about 8-10 minutes.
Add diced onions to the skillet and continue cooking until onions turn translucent, about 5 minutes. Add another tablespoon of butter if needed.
Add diced red bell pepper and stir to combine.
Add garlic powder, paprika, salt and pepper, stir to combine.
Add sliced sausage, and stir to combine with everything in the skillet.
Be sure to use a cooked sausage for this recipe. We are just cooking it long enough to heat it through.
Continue cooking, stirring frequently to prevent burning, until potatoes are soft and sausage is heated through.
Top hash with a layer of shredded cheddar cheese and cover pan.
Change up the flavor profile of this hash; use a Pepper Jack cheese for a more spicy kick, or a Colby Jack for a milder flavor. Use your favorite or whatever you happen to have on hand. Any cheese that melts well will work for this hash. We happen to love cheddar and I always hove some on hand in the fridge.
Turn off heat and allow cheese to melt before serving.
Serve hash topped with a dollop of sour cream, some hot sauce or your favorite salsa.

A Hearty Cast Iron Skillet Sausage Hash

- Large cast iron skillet
Ingredients
- 13.5 oz Kielbasa sausage, cut into ¼ inch thick slices
- ½ large onion, diced
- ½ red bell pepper, diced
- 4 medium potatoes, peeled and diced
- 3 tbsp butter
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp Kosher salt
- ½ tsp pepper
- 1½ cups cheddar cheese, shredded
- sour cream, to serve
- salsa or hot sauce, to serve
Instructions
