Oatmeal Scotchies, A Perennial Family Favorite Cookie Recipe

Sometimes the classics really are the best. Take this Oatmeal Scotchie cookie recipe from Nestle. The oatmeal produces a soft and chewy center with slightly crispy edges. They are the perfect texture with a burst of yummy flavor from the butterscotch chips in every delectable bite. Of all the different cookies I love to bake, these cookies rank up there as one of our favorites.

Are you a fan of butterscotch like we are? Add some to your next batch of brownies. Oh my, such an easy addition that produces some of the tastiest brownies you will ever eat.

But I digress…let’s get back to the cookies. There are couple tips to keep in mind as you make these cookies that will guarantee you get excellent results. Keep reading to find out how easy it is to bake up these perfectly tasty morsels of chewy deliciousness!

Begin by gathering together all the ingredients and preheating your oven to 375 degrees F.

In a small bowl combine flour, baking soda, salt, cinnamon and nutmeg. Set aside.

Add freshly grated nutmeg to the dry ingredients if you have it. It really ups the flavor!

In the mixing bowl of a stand mixer beat sugar, brown sugar, vanilla extract and butter together until light and fluffy.

PRO TIP: Cream together the ingredients for at least 5 minutes on high speed. The texture of the batter will get lighter in color and get fluffier. One reason for poor results when baking cookies is not creaming the butter and sugar together long enough on high speed. So let your mixer rip for a good 5 minutes or more.

Add eggs one at a time. Reduce speed and add flour mixture.

Mix until well combined. Add oats and butterscotch chips.

PRO TIP: Using a cookie scoop, ensures all the cookies are the same size and bake up evenly.

Place tablespoons of dough onto a cookie sheet lined with a silpat liner or parchment paper. 

PRO TIP: Dough is soft and sticky. Be sure to use either a silpat liner or parchment paper to line your cookie sheets, otherwise cookies will stick and you will have a mess on your hands!

Bake for 10-12 minutes. 11 minutes in my oven produces a perfectly textured cookie.

PRO TIP: Keep a close eye on those cookies while they are in the oven. Don’t overtake these cookies. Pull them out of the oven when the centers look like they are still undercooked. The cookies will settle and firm up after they come out of the oven.

See those ever so slightly browned edges? These are perfectly baked.

Remove from oven and allow cookies to cool for 10 minutes on the cookie sheet. Cookies will firm up and the centers will set up as they sit on the warm cookie sheet.

After 10 minutes, use a spatula to carefully transfer the cookies from the cookie sheet onto a cooling rack and allow them to cool completely.

Cookies will be on the thiner side, not thick.

Time to pour a big glass of milk. Just look at how nice these turned out!!!

Ingredients
  

  • cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 2 sticks butter, softened
  • ¾ cup brown sugar, packed
  • ¾ cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 3 cups Old Fashioned Quaker Oats
  • 11 oz Nestle Toll House Butterscotch Morsels 

Instructions
 

  • Preheat oven to 375° F.
  • In a small bowl combine flour, baking soda, salt, cinnamon and nutmeg. Set aside.
  • In the mixing bowl of a stand mixer beat sugar, brown sugar, vanilla extract and butter together until light and fluffy.
  • Add eggs one at a time.
  • Reduce speed and add flour mixture. Mix until well combined.
  • Reduce speed to low and add oats.
  • Add butterscotch chips.
  • Using a cookie scoop, place tablespoons of dough onto a cookie sheet lined with a silpat liner or parchment paper.
  • Bake for 10-12 minutes.
  • Remove from oven and allow cookies to cool for 10 minutes in the pan.
  • Using a spatula, transfer cookies from pan onto a cooling rack and allow cookies to cool completely.
