Quick & Easy, Cheesy, Chorizo Puff Pastry Turnovers

Every few weeks my bestie, Veronica and I get a hankering to go thrifting at our favorite thrift store. Since it’s quite the excursion, we always stop in at our favorite Mexican grocery store for some freshly cooked Chicharrones and a couple pounds of Chorizo sausage on our way home from thrifting. I’m always excited to make the road trip with her. Not only do I come home with a load of thrift store treasures, but I also have some of the very best Chorizo to use for cooking up some really fantastic meals.

When I have a good high quality flavorful Chorizo, I love using it to make these simple but tasty turnovers. This recipe uses only three ingredients so using a good quality Chorizo is key!

Start by removing the puff pastry dough from the freezer and allow it to thaw as you prepare the filling.

Preheat oven to 375°F.

Shred pepper jack cheese and set aside.

Brown chorizo over medium heat until cooked through, breaking up the meat into small crumbles as it cooks. Drain off any excess fat. Remove from heat.

On a lightly floured surface gently roll out the puff pastry dough increasing the size by about 20 percent. 

Cut each sheet of dough into 4 squares.

A pizza cutter makes quick work of cutting the dough.

Divide the chorizo and shredded cheese evenly between the eight squares of dough placing it in the center of each square. 

Fold the squares in half diagonally to create triangles, enclosing the filling. Pinch the edges together with your fingers to create turnovers (use a little bit of egg wash along the edges to bind) if needed. 

Press the edges together with the tines of a fork to create a decorative border and seal the turnovers. Press firmly to seal the edges so the filling doesn’t leak out as the turnovers bake in the oven. 

Cut a small slit in the top of each turnover to allow steam to escape during baking. 

Brush the turnovers with the egg wash. This will give them a lovely golden brown crust as they bake.

Bake the turnovers until golden brown, about 30-35 minutes. 

Let cool at least 5 minutes before serving as the insides will be very hot.

It’s amazing how good these are considering they are made with only three ingredients and basted with a simple egg wash. I serve these turnovers with a crisp green salad to round out the meal.

  • 1 lb Chorizo sausage, casings removed
  • 2 cups pepper jack cheese, shredded
  • 2 sheets frozen puff pastry, thawed
  • 1 egg, beaten with a splash of water
