I confess, I am a mushroom loving fool! I add them to just about everything. I love the earthy umami flavor they bring to savory dishes.
Mushrooms also have health benefits. They contain B vitamins and a powerful antioxidant called selenium. Selenium helps support a strong and healthy immune system and prevent damage to cells and tissues. I don’t know about you but eating your way to health and maintaining youth by eating something delicious sounds pretty darn good to me. Sign me up!!!
This recipe makes it easy to serve up a delicious vegetable with just about any meal. Toss mushrooms together with a few ingredients and pop them in the oven, it doesn’t get much easier than that!
Rinse and wash sliced mushrooms. Allow excess water to drain off.
I know some say you shouldn’t wash mushrooms and just lightly brush off any dirt. Can’t do it, I have to wash them. Any water will evaporate as they roast in the oven. So go ahead and give them a good rinse with cold water.
Place sliced mushrooms in a large bowl. Drizzle olive oil over mushrooms. Stir to coat mushrooms with the olive oil.
Add 1/4 cup bread crumbs, 1/4 cup grated Parmesan cheese and the chopped parsley. Stir to coat mushrooms with the breadcrumbs and Parmesan cheese.
Transfer mushroom mixture to an oven safe casserole dish and spread out in an even layer.
Top with another 2 tablespoons of grated Parmesan cheese.
Bake at 375 degrees for 30-35 minutes until heated through.
These mushrooms would be amazing piled on top of a slice of freshly baked bread!!! Pair that with a nice smooth red wine and you will think your tastebuds have died and gone to heaven!

Roasted Parmesan Mushrooms
Ingredients
- 20 oz. sliced baby bella mushrooms
- 3-4 tbsp olive oil
- ¼ cup grated parmesan cheese
- ¼ cup breadcrumbs
- 2 tsp grated parmesan cheese
- 2 tbsp chopped fresh Parsley
Instructions
- Rinse mushrooms and allow excess water to drain off.
- Place washed mushrooms in a large bowl. Add olive oil and toss to coat musrooms with the olive oil.
- Add ¼ cup Parmesan cheese and ¼ cup breadcrumbs. Stir to combine with olive oil coated mushrooms.
- Place in a casserole dish and spread out in an even layer.
- Sprinkle 2 teaspoons Parmesan cheese evenly over the mushrooms.
- Bake in a 375° oven for 30-35 minutes until heated through and liquid has cooked off.
- Top with chopped parsley to serve.
