The Best Ever Old Fashioned Peach Cobbler

When my sister in law Robyn said she was coming to visit I was doing a happy dance! She grew up on a farm and learned to cook from her grandmother. She’s kinda my cooking idol. Not only is she an amazing cook, but she bakes the most amazing desserts, she bakes bread from her own sour dough starter that she’s kept going for over 10 years, she cans fruits and veggies and makes the most delicious jams and jellies I’ve ever eaten!

How lucky am I to have this stash of deliciousness?!?!?!

I had a jar of peaches in the pantry that I picked up a while back at the market. They looked so pretty I couldn’t resist adding them to my cart, but I had no idea at the time how I would end up using them.

They look like sunshine in a jar.

I asked Robyn if she had an easy recipe using canned peaches. I thought for sure we would be baking a pie, but she prefers to use fresh fruits that are in season for pies. You can certainly use fresh fruits for this cobbler but canned fruits are perfect when fresh fruits aren’t in season. Instead of pie we baked up this delectable cobbler, her Grandmother’s recipe.

Start by preheating your oven to 350°F.

Slice an entire stick of butter and place it in an oven safe casserole dish.

Place the casserole dish in the oven for several minutes, until the butter has completely melted. Remove from oven.

Drain the fruit.

Add the fruit to the pan with the melted butter in thee casserole dish and stir to combine.

In a mixing bowl stir together the dry ingredients; flour, sugar, baking powder and salt.

Add milk and vanilla to the dry ingredients and stir to combine.

Pour the batter over the butter/fruit mixture in the casserole dish and spread it out evenly.

Once oven temperature reaches 350°, bake the cobbler for 40-50 minutes or until the crust turns a light golden brown and a toothpick comes out clean. Be careful not to over bake it.

Perfectly browned.

This cobbler is best served warm with ice cream melting all over it…oh my! So, so very good! And so very, very easy to make too!!! Thinking about all the different fruits to use for this cobbler…strawberries, raspberries, blueberries, blackberries, apples, pears, plums, cherries. The possibilities are endless! Just about any fruit you would bake up in a pie can be used in this easy cobbler recipe.

I love that you can use either canned fruits or fresh. I can hardly wait for summer when strawberries are in season!!! Oh yah! As much as I adore a freshly baked pie, they are a lot more work. This cobbler takes just a few minutes to get into the oven. Once it’s baked all that’s left to do is gobble it up!!!
