After a long day at work, sometimes the last thing I want to do is spend an hour or more in the kitchen cooking dinner. As much as I love to cook, some days I’m just not in the mood, are you with me? That’s when I pull out this meal. Simple, quick, nutritious and tasty, it checks all the boxes. This is a great meal to master and have in your cooking arsenal for when you are short on time but you don’t want take out or fast food for dinner. A quick stop at the market on your way home from work to pick up a sirloin steak, some fresh mushrooms, a box of wild rice, and you’ve got everything you need to make this tasty meal.

Once the rice is going, it’s time to get started on the mushrooms. Wash the mushrooms and cut off the stems. Melt a couple tablespoons of butter in a large frying pan over medium high heat. When the butter is melted and hot, add the mushrooms and cook them until they release all their liquid, about 20 minutes. Turn them several times as you cook them so they cook evenly on both sides.
While the mushrooms are cooking, prepare the sirloin steak. Cut it into 1 inch cubes, removing any visible excess fat. Season liberally with salt, pepper and garlic powder.
Once the mushrooms are done, remove them from the pan and set them aside; keeping them warm. Add another 2 tablespoons butter to the same pan. Once the butter is melted, add the cubed sirloin steak bites to the pan.
TIP: Don’t crowd the pan or the beef will steam instead of brown. The goal is to get a good char on the outside. Cook the beef in batches if needed.
Allow the steak bites to brown and then turn them over to brown on the other side. If your pan is nice and hot it will only take a couple of minutes on each side to get them cooked medium rare. The goal is to brown the edges and keep the centers red and juicy.
To serve, place a mound of rice in a large shallow bowl, top with a generous portion of sautéed mushrooms and steak bites.

Steak Bites, Wild Rice & Sautéed Mushrooms
Ingredients
- 1 box wild rice mix, made according to package directions
- 16 oz whole Bella or button mushrooms, stems removed
- 4 tbsp butter
- 1 lb sirloin steak, cut into 1 inch cubes
- salt
- pepper
- garlic powder
- A-1 steak sauce, optional
