Baked Chicken Parmesan; A Quick & Easy To Make, Leftover-Makeover

Every time we’re at an Italian restaurant, one of my all time favorite dishes to order off the menu is Chicken Parmesan. What’s your favorite Italian dish? I typically don’t make this at home because it’s quite a labor intensive meal to make. First you need to make the breaded cutlets, which requires setting up a breading station, and that’s time consuming, Then you need to fry up the cutlets. That’s just the first part. Then the cutlets need to be baked with marinara sauce, and topped with cheese. That’s a lot of steps for just one meal. Let’s be honest here, ain’t nobody got time for that on a weeknight, right?

But if you happen to have leftover chicken cutlets in your fridge, and a jar of marinara sauce in the pantry you can easily get this delicious meal on the table in 30 minutes! Wait…what? Yes you read that right, a delicious Italian classic, Chicken Parmesan, on the table in 30 minutes, served on a bed of the creamiest, dreamiest, garlic pasta you’ve ever had. And…it’s all from scratch so you know exactly what’s in it. Wanna learn how? Keep reading!!!

The next time you make one of my all time favorite chicken dishes, crunchy Parmesan Chicken cutlets, make extra so you end up with leftovers. You’ve already got a breading station set up so frying up a few more cutlets will only take a few extra minutes, saving you loads of time for a future meal. The Parmesan cheese in the breading makes them the perfect, flavorful cutlets for this leftover-makeover meal.

Recipe for Parmesan Chicken cutlets.

These leftovers won’t go to waste!

Start by preheating oven to 350°F.

Place chicken cutlets in a single layer in the bottom of an oven safe casserole dish and top each cutlet with 1-2 tablespoons marinara sauce. I cook up 2 cutlets per serving, you can make more or less depending on how many you are feeding.

Add more sauce if you like it really saucy.

Top each sauced cutlet with a slice of cheese.

I used Provolone cheese slices because that’s what I had in the fridge.

Bake in the oven for 20-25 minutes.

All ready to pop in the oven.

Bake until cutlets are heated through and the cheese is hot and bubbly.

Look at how yummy they look!!! It’s making my mouth water! But we’re not done yet…

My favorite way to serve Baked Chicken Parmesan is over a bed of Creamy Garlic Pasta. Once you pop the chicken in the oven you have plenty of time to make this creamy, dreamy, utterly decadent pasta side dish. I love that’s its made from scratch, and made in just one pan…which means less clean up! Gotta love that!!!

This is one of the best pasta dishes you will ever devour!

You could also cook up some spaghetti and use any leftover marinara sauce in the jar to coat the pasta to serve with the Chicken Parmesan. Most Italian restaurants serve it this way, but I encourage you to try it with the Creamy Garlic Pasta. I GUARANTEE you will LOVE it! It’s one of my all time favorite sides and there’s NEVER any leftovers when I make it. It takes an Italian classic over the top!

Chicken Parmesan cutlets topped with marinara and melted cheese, nestled on a bed of creamy, dreamy Garlic pasta, be-still my beating heart!!! This is, hands down, one of my all time favorite leftover-makeover meals; my teenager and hubs would agree! If you have a family that hates leftovers, this is the perfect sneaky but delicious way to get them to eat leftovers…ha-ha. Yes, it’s technically leftovers, but this recipe transforms them into an entirely new meal so no-one in the family has to know they are eating leftovers. It can be our secret, I won’t tell if you won’t tell.

  • 8 cooked breaded chicken cutlets
  • 8 oz marinara sauce
  • 8 slices Mozarella or Provolone cheese

Instructions
