Is there anyone out there who hasn’t eaten Ramen? You know what I’m talking about, those packages of noodles with the foil pouch of flavoring? Just add water and they cook up in just a few minutes. I’m willing to bet many a broke college student has avoided starvation thanks to these inexpensive bowls of soup. I confess I’ve had my fair share of them over the years. I bet you probably have some in your pantry right now. There’s no shame in that. I always kept a few on hand in my desk drawer at work. They are perfect in a pinch when you can’t get away from your desk for lunch.
This stir fry recipe uses those inexpensive noodle packages as the base but it’s transformed into a delicious satisfying meal with the addition of tender strips of beef and loads of fresh veggies.
TIP: Keep parsley fresh longer by storing it in a jar with water. Not only will it stay fresh longer, but it just looks so darn pretty sitting out on your kitchen counter for several days. I just love functional decor!

As with all stir fry recipes it’s important to get everything prepped and ready to go before you turn on the heat. Once that pan is hot, this stir fry cooks in just a few quick minutes! Start by slicing the beef into thins strips, chopping all the veggies and portioning out the seasonings so you have everything ready to go.
Vegetable variations to try: sliced green bell peppers, sliced mushrooms, asparagus cut into 1 inch pieces, broccoli florets, bean sprouts, sliced zucchini. Clean out the veggie drawer in your fridge and use whatever you have on hand.
Cook the ramen noodles according to package directions. Drain noodles and set aside.
Good to know: Did you know placing a wooden spoon on the pot will keep it from boiling over? I don’t know how this actually works but it really does.
Place oil in a wok or large skillet and heat over medium high heat. When the oil is hot, add the red bell peppers, pea pods, carrots and celery.
Stir fry 2-3 minutes or until vegetables are crisp tender. Remove from wok.
Add sirloin steak strips to the wok and stir fry for 2-3 minutes until cooked medium rare.
Return the cooked vegetables to the wok.
Add the cooked ramen noodles.
Add the seasoning packets from ramen noodle packages and water. Stir to combine.
You can use any flavor of Ramen noodles you have on hand. Beef is the obvious flavor but I’ve used Oriental and even Pork flavor and they are also delicious in this dish.
Add teriyaki sauce, ginger, red pepper flakes and freshly chopped parsley.
Stir fry until everything is heated through, about 1-2 minutes and the liquid has reduced and thickened.
Serve garnished with chopped green scallions.
Not only is this one of the easiest meals to make, but it is also one of the most delicious. I will be making it over and over all summer long. Even my picky teenager that’s not a big fan of veggies slurped this down with no complaints. I even got a, “dinner was really good mom.” WOW ❤️

Ingredients
- 2 (3oz) pkgs Ramen noodles with seasoning packets
- 16 oz sirloin steak, cut into ½ inch thick strips
- 1 tbsp oil
- ½ red bell pepper, cut into thin strips
- 1 medium carrot, thinly sliced
- 1 stalk celery, thinly sliced on the bias
- 6 oz snap pea pods, cut in half
- ½ cup water
- 2 tbsp teriyaki sauce
- 1 tsp fresh ginger, minced
- ¼ tsp red pepper flakes
- 1 tbsp fresh parsley, chopped
- 1 stalk green scallion, thinly sliced
Instructions
- Cook ramen noodles according to package directions. Drain and set aside

- Serve garnished with sliced green scallions.
