This meal is what I love to call a pantry meal. The next time you make a trip to your local Trader Joe’s be sure to pick up the 3 ingredients needed to make this soup. It’s such an easy way to stock your pantry and freezer with the ingredients needed for this soup.

Make ahead TIP: Dice sausage and freeze so you have it available whenever you get a hankering to make this flavorful soup. No need to thaw it, just toss into the soup and simmer until heated through.

Keeping these ingredients on hand makes sure you will always have what you need to whip up this soup in no time. It’s the perfect meal when you are just too doggone tired to cook an elaborate meal but you are craving something yummy. Cupboards bare? Haven’t been to the market in a while, No worries, this soup can easily come to the rescue.

The recipe calls for using a Jalapeño Chicken sausage, but you can easily substitute with a milder, less spicy option if you want a mellower soup. Pick your favorite sausage for the protein in this soup. Trader Joe’s has numerous options to choose from. Just be sure to select a sausage that is already fully cooked.

The hardest part of this recipe is cutting the sausage into diced pieces.

Ingredients
  

  • 32 oz Latin Black Bean soup
  • 16 oz Peruvian style Chimichurri Rice with vegetables
  • 2-3 chicken and jalapeño sausages, fully cooked
  • sour cream, as garnish

Instructions
 

  • Dice sausages into ½ inch pieces.
  • Place diced sausage, black bean soup and Chimichurri rice in a large saucepan.
  • Stir to combine.
  • Cook over medium heat until heated through, about 10 minutes.
  • Serve topped with a dollop of sour cream if desired.
