Start by making the cinnamon sugar topping.
In a small bowl, combine 1½ teaspoons cinnamon and ⅓ cup sugar and set aside.
Preheat oven to 350°F.
Make the cheesecake:
Roll out one package of crescent roll dough in the bottom of an ungreased 13 x 9 inch oven safe baking dish and set aside. If you are using regular crescent roll dough that has the perforations in it, be sure to pinch the seams together.
Using a stand mixer, beat together the two packages of softened cream cheese, one cup of sugar and vanilla extract.
Beat until smooth, creamy and fluffy.
Place cream cheese filling on the crescent roll dough in the baking dish.
Spread out cream cheese mixture evenly over crescent roll dough in the baking dish.
Roll out second package of crescent roll dough on top of the cream cheese mixture.
Spread melted butter evenly over the crescent roll dough.
Sprinkle cinnamon/sugar evenly over melted butter.
Bake in 350° preheated oven for 25-30 minutes, until golden brown.
Cool completely before cutting into bars.
Serve at room temperature or chilled. Store leftovers in the refrigerator, if you have any leftovers. This was insanely good and even though we were all stuffed from dinner, everyone had to have a second piece…it was just that good!
