Once you master roasting a chicken in your air fryer you will never want to buy one of those scrawny, way too salty, overpriced rotisserie chickens at the supermarket ever again. It takes less than five minutes to prep the bird and the air fryer does all the hard work for you. Your kitchen will be filled with the most delectable aroma as the bird cooks. The air fryer produces a delicious crispy, crunchy skin. And the meat? It’s fall off the bone tender and extremely juicy! You can finally kiss dry-as-sawdust-chicken-breasts goodbye, once and for all!!!
Your’e going to be pleasantly surprised at how ridiculously easy it is to make this meal. Start by washing the chicken under cold running water in your sink. Remove any organs from the inside cavity and discard them.
Pat the entire chicken dry with paper towels.
Stuff the cavity with the lemon chunks, rosemary sprigs, and garlic cloves.
Coat the entire outside of the chicken with olive oil.
Season generously with salt, pepper and garlic powder.
Place the prepped bird on a foil lined pan, breast side down. Air fry at 360°F for 45 minutes.
Flip chicken over (breast side up) and continue to air fry the bird for another 15 minutes. Remove the bird from the air fryer and allow it to rest for 10 minutes before cutting into it.
TIP: After dinner, once the chicken has cooled off, remove any remaining leftover meat from the carcass and place it in a ziplock bag. Freeze the meat to use later in a recipe that calls for cooked chicken.
Serve chicken with a drizzle of gravy, a side of stuffing and a crisp green salad to round out the meal.
Air fried chicken has become my go to meal when I’m feeling decidedly lazy and I’m just not in the mood to cook up an elaborate meal. Serve it with a side of stuffing (I won’t tell if you use the kind in the red box), top each serving with a drizzle of gravy, add a crisp green salad, and you will have a delicious dinner on the table with minimal effort.
TIP: The carcass can also be frozen and used later. Boil it in a pot of water with a couple of carrots, celery stalks and an onion to make a homemade chicken broth. Perfect if you want to make some homemade chicken soup.
