Pour vodka sauce and chicken broth in a large saucepan and bring to a simmer over medium high heat.

Simmer over medium heat for 20 minutes, stirring occasionally.

Add the spinach leaves to the pot.

Simmer for 2-3 minutes until spinach wilts and cooks down.

Add the gnocchi and stir. Simmer for 4-5 minutes or until gnocchi are tender and cooked through. Gnocchi will float to the top of the soup when they are done.

Taste the broth and season with salt and pepper if needed.

Ingredients
  

  • 32 oz jar vodka pasta sauce
  • 64 oz chicken broth
  • 10 oz bag fresh spinach leaves, roughly chopped
  • 2 lbs potato gnocchi
  • salt and pepper, to taste
  • Ā½ cup parmesan cheese, grated

Instructions
 

  • Pour vodka sauce and chicken broth in a large saucepan and bring to a simmer over medium high heat.

  • Add the chopped spinach leaves to the broth and cook for 2-3 minutes until the spinach wilts and cooks down.
