How To Make A Quick & Easy Sausage Hashbrown Breakfast Bake

This savory breakfast bake is so quick and easy to make. It’s perfect when you have guest staying with you over the holidays. You won’t have to prep anything the night before. Go ahead and stay up late to ring in the New Year with your friends. Feel free to sleep in. When everyone finally stumbles out of bed; when hunger pangs strike, and tummy’s start rumbling, just layer all the ingredients in a casserole dish, pop it in the oven and you’ll be pulling out this crowd pleasing, savory breakfast bake in the time it takes to brew a fresh pot of coffee, whip up a fresh fruit salad and set the table.

This breakfast casserole has it all. You really can’t go wrong with this lineup of everyone’s favorite breakfast ingredients!

Preheat oven to 350℉.

Cook breakfast sausages in a skillet over medium heat until they are cooked through and browned.

You can skip this step if you’re using precooked breakfast sausage links.

Slice sausages. Set aside

Grease a 13×9 inch oven safe casserole dish.

Place 8 hash brown patties in the bottom of the casserole dish. Add more if needed. The hash browns will form the potato crust at the bottom so you want enough patties to cover the bottom of the casserole dish.

Grate an insane amount of cheddar cheese. The recipe calls for a measly 2 cups of grated cheese but you can certainly use more. No judgement from me!

Top the layer of hash brown patties with a generous layer of grated cheddar cheese.  

Sprinkle the reserved sausage slices evenly on top of the shedded cheese.

Add milk, eggs, dry mustard, seasoned salt, and pepper to a mixing bowl.

Whisk it all together until well combined.

Pour the egg mixture evenly over casserole.

Cover with foil and bake for 25 minutes.

All ready to go into the oven.

Remove foil and bake for an additional 20 minutes or until edges are lightly browned and center is set and not jiggly.

Just look at that melty cheesy sausage goodness!

Remove from the oven and allow casserole to sit for 10 minutes before slicing into it and serving.

To serve, top with a dash of hot sauce, a dollop of sour cream, and sliced green onions if desired.

Ingredients
  

  • 8 frozen hash brown patties
  • 2 cups sharp Cheddar cheese, shredded
  • 1 lb breakfast sausage links
  • 6 large eggs
  • cup whole milk
  • 1 tsp seasoned salt
  • ½ tsp dry mustard
  • ½ tsp black pepper
  • sliced green onion, for garnish
  • hot sauce, optional

Instructions
 

  • Preheat oven to 350℉.
  • Cook breakfast sausages in a skillet over medium heat until cooked through and browned.
  • Slice sausages. Set aside

  • Pour egg mixture evenly over casserole.
  • Cover with foil and bake for 25 minutes.
  • Remove foil and bake fat an additional 20 minutes until edges are lightly browned and center is set and no longer jiggly.
  • Remove from oven and allow casserole to sit for 10 minutes before serving.
  • Top with a dash of hot sauce and sliced green onions if desired.
