How To Make The Most Delectable Leftover-Makeover Steak Sandwiches

How do you know you’re a foodie? Do you literally dance for joy when you pull out a freshly baked loaf of bread from the oven? You might be a foodie. Do you pour over cookbooks, just for fun? You might be a foodie. Do you lie in bed late at night thinking about recipes and combining different ingredients to create new recipes? You might be a foodie. Does every event you plan or attend center around the food? You might be a foodie. Do you cook your family’s favorite foods to show them that you love them? Yep, you’re probably a foodie just like me.

I’m so blessed to have several foodie girlfriends in my life. Let me tell you, foodie brains are definitely wired differently from everyone else’s. How often do you get a phone call where the main topic of discussion is centered around food? Not just what we’ve cooked and enjoyed lately but also the exchange of ideas for creating even more delicious foods?

Let me start by saying, you’re in for a real treat today! This delectable combination of ingredients using leftover roast beef from the holidays to make this delectable steak sandwich is my girlfriend Cindy’s brainchild. She is definitely a foodie like me. I love how her mind works and once you try this sandwich, you’re going to wish Cindy was your friend too!

Heat olive oil in a heavy skillet over medium heat.

Once the oil is hot, add the sliced onions. Sauté until soft and a rich golden brown, about 10-15 minutes, stirring frequently.

Add sliced beef and cook until it’s heated through.

While the onions are cooking, cut rolls in half and spread with garlic butter.

Use a sturdy roll like a good crusty Sourdough roll or Ciabatta roll. A softer sweet French bread or Bolillo roll may fall apart when you add all the ingredients. You need a sturdy vessel to hold together all the delicious ingredients.

Place buttered rolls in the oven and toast, cut side up, under the broiler until toasted to a golden brown.

Top half of each sandwich with sliced Cambazola cheese and return to the oven until the cheese is melted, about 1-2 minutes.

Cambazola cheese is a velvety, creamy cheese with a texture like Brie cheese, with blue cheese bits in it. It’s a smooth and creamy cheese with a lovely mild blue cheese flavor that melts beautifully! It’s worth searching for this cheese because it adds loads of flavor to this sandwich. You can find it at most major supermarkets that have a specialty cheese deli case. Trader Joe’s carries it as well.

Remove toasted rolls from the oven and top half of each sandwich with the grilled onion and beef mixture.

Drizzle grilled onion beef mixture with balsamic glaze.

Add lettuce and sprouts to each sandwich if using.

Serve sandwiches right away while the beef and onions are hot and the cheese is warm and melty. Be sure to set out a big stack of napkins, you’re going to need them.

Make these delectable roast beef sandwiches with leftovers from your holiday table.

Ingredients
  

  • 2 tbsp olive oil
  • 1 large onion, thinly sliced
  • 12 oz leftover cooked roast beef, sliced
  • 4 Ciabatta rolls
  • 4 tbsp garlic butter
  • 4 oz Cambazola or Brie cheese, sliced
  • 4 tsp balsamic glaze
  • lettuce, optional
  • sprouts, optional

Instructions

  • Add lettuce and sprouts to each sandwich if using.
  • Serve right away while beef and onions are hot and cheese is warm and melty with a stack of napkins.
