How to Make Delicious Leftover-Makeover Beefy Cheese Burritos

It’s been years since I ventured through a Taco Bell drive thru, especially since I’ve been making these Beefy Cheese Burritos using leftover taco meat from our weekly taco Tuesday meals. I heave to confess, this homemade version is so much tastier than anything you can order off their drive thru menu, and so much more economical as well. Gone are the days of ordering off a value menu.

I love that I know exactly what ingredients are rolled up inside the crunchy shells, no mystery meat here, thank you very much! These burritos are baked in the oven, not fried making them a healthier option. When time is short on a busy week night, that container of leftover taco meat in the fridge sure comes in handy and makes getting this meal on the table that everyone will devour a snap.

Preheat oven to 350℉.

Cover a cookie sheet with foil and spray lightly with non-stick spray. Set aside.

Place cream cheese and salsa in a mixing bowl. Beat together using a hand blender until smooth and creamy.

Place a flour tortilla on your work surface.

Spread a layer of the cream cheese/salsa mixture onto the flour tortilla.

Top with about a ⅓ cup ground beef.

Top with shredded cheddar cheese.

Roll up the tortilla enclosing the beef/cheese mixture forming a burrito. Place burritos, seam side down, on prepared cookie sheet.

Brush each burrito with melted butter. There’s something magical that happens in the oven when your brush flour tortillas with butter and bake them. They end up slightly crunchy with a lovely buttery flavor…utterly irresistible! 

Bake burritos for 20-25 minutes, until heated through and tortillas are a light golden brown. You may want to give them a few minutes to cool down. The filling is very hot when you first pull them out of the oven.

Serve these burritos with a side of hot sauce and sour cream if desired.

Oh my gosh, these sure are tasty! I mean, what’s not to love? They’re loaded with savory taco flavored ground beef and creamy melted cheese. The tortilla bakes up nice a crunchy along the edges and are the perfect wrap for the beefy, cheesy filling. This is one of my very favorite ways to use up left over taco meat. Give this a try. I guarantee, your family will love them! And no trip to the drive thru needed.

  • 3 tbsp butter, melted
  • hot sauce, to serve

Instructions
