Instead of serving them to your kids as a snack, use them as the base for a casserole of chicken enchiladas. The next time you’re at the market toss a package of chicken taquitos into your cart so you have them on hand in your freezer. When you need an easy to make meal on the table you can easily whip up this meal with just a few minutes of effort.
Preheat oven to 400ā.
Pour about a half cup of enchilada sauce in the bottom of a casserole dish. Spread it out to cover the entire bottom of the dish.
Place frozen taquitos in the bottom of a casserole dish in a single layer. No need to thaw them out.
Top taquitos with enchilada sauce, making sure to entirely cover the taquitos with the sauce.
Top with a generous layer of shredded cheddar cheese.
Sprinkle with sliced black olives.
Bake for 30-35 minutes or until heated through and the cheese is melted, and hot, and bubbly.
Top each serving with a dollop of sour cream.

- Oven safe casserole dish.
Ingredients
- 16-18 oz package frozen chicken taquitos
- 19 oz can of red enchilada sauce
- 1Ā½ cups cheddar cheese, shredded
- 2.25 oz can of sliced black olives, drained
- sour cream, to serve
Instructions
- Preheat oven to 400ā.
- Place taquitos in the bottom of a casserole dish in a single layer.
- Top with enchilada sauce, making sure to cover the taquitos with the sauce.
- Top with the shredded cheddar cheese.
- Sprinkle with sliced olives.
- Bake for 30-35 minutes until heated through and the cheese is hot and bubbly.
- Serve with a dollop of sour cream.
