If you have never attempted to cook one, and always thought it was a complicated process, today’s post will walk you through it step-by-step, so you can serve up the most perfect roast Beast this holiday season. Then the Grinch thought of something he hadn’t before!
“Maybe Christmas,” he thought, “doesn’t come from a store.”
“Maybe Christmas…perhaps…means a little bit more!”
And what happened then? Well…in Whoville they say,
That the Grinch’s small heart grew three sizes that day!
And the minute his heart didn’t feel quite so tight,
He whizzed with his load through the bright morning light,
And he brought back the toys! And the food for the feast!
And he, HE HIMSELF! The Grinch carved the roast beast!
Remove roast from the fridge at least 2 hours prior to cooking it, to allow it to come to room temperature.
When ordering your roast from the butcher ask him for a bone-in roast and to “cradle” it. That means the butcher will cut off the ribs on the roast and tie them back onto the roast. Cooking the roast with the ribs enhances the flavor and provides the perfect rack to cook your roast on. Having the butcher cut off the ribs and tie them back onto the roast makes it so much easier to carve the roast after it’s been cooked. You can do this yourself but it will save you loads of time and effort if you ask the butcher to do it for you. The butcher will also let you know what size roast you will need for the number of people you are serving.
Preheat oven to 350℉.
Rub olive oil over the entire roast.
Massage salt and pepper onto the top, and sides of the roast.
Rub minced garlic and chopped rosemary onto the roast.
Place roast, rib side down in an oven safe pan. A cast iron skillet is perfect for this.
Cook for 12-15 minutes per pound or until an instant read thermometer registers five degrees below desired doneness. Roast will continue to cook another five degrees after it’s removed from the oven. See recipe notes below for desired doneness.
Remove the roast from oven and tent it loosely with a sheet of foil. Allow roast to rest for 20-30 minutes before slicing it.
After roast has rested, cut the twine and remove it along with the ribs. Use a sharp knife to slice roast to desired thickness and serve with au jus or horseradish sauce.

Rosemary, Garlic, Perfect Prime Rib Roast Beast
Equipment
- oven safe roasting pan
Ingredients
- 10-12 lb bone-in standing rib roast
- ½ cup olive oil
- 1 head garlic, minced
- ¼ cup ground black pepper
- ½ cup kosher salt
- ½ cup fresh rosemary, chopped
Instructions
- Remove roast from the fridge 2 hours prior to cooking, to allow it to come to room temperature.
- Preheat oven to 350℉.
- Rub olive oil over the entire roast.
- Massage salt and pepper onto the top, and sides of the roast.
- Rub minced garlic and chopped rosemary onto the roast.
- Place roast, rib side down in an oven safe pan.
- Roast for 12-15 minutes per pound or until an instant read thermometer reads five degrees below desired doneness. Roast will continue to cook after it's removed from the oven. See recipe notes below for desired doneness.
- Remove thee roast from oven and tent with a sheet of foil. Allow roast to rest for 20-30 minutes before slicing it.
