Introducing the Brand New “Tacodilla”

We sure do love us some tacos around here at Nature Way; Fish Tacos, Turkey Tacos, Sweet Potato Tacos, Shredded Beef Tacos, Chicken Tacos. Like I said, we really do love tacos. We also happen to love a gooey, cheesy quesadilla on occasion.

One of our newest favorites is the breakfast quesadilla. It makes a regular appearance at our house. Use whatever you have readily available in the fridge. It’s so versatile and super tasty! I’ve been known to serve breakfast for dinner on more than just one or two occasions.

It got me thinking, what would you get if you combined all the gooey, cheesy goodness of a quesadilla with the delicious toppings of a taco? You get a Tacodilla, and they are amazingly good!!! The best part is you can easily feed a crowd and everyone can fix their Tacodilla just the way they like them.

I set up a taco bar with our favorite taco toppings and let everyone assemble their own Tacodilla. Takes some of the work off of me and everyone can customize their Tacodilla with their favorites. A win-win!

So how do you make a Tacodilla? The first step is to prepare the shells for the Tacodillas.

This is what you will need to make the shells.

In a large skillet over medium heat, melt a tablespoon of butter and add a sprinkle of garlic powder and seasoned salt.

Place a tortilla on the melted seasoned butter in the pan.

Add about a ¼ cup cheddar cheese and fold the tortilla in half.

Fry the tortilla on both sides until browned and the shell is nice and crunchy.

Check to make sure cheese is melted.

Place the cooked tortillas on a platter and keep them in a warm oven while you prepare the meat. 

TIP: Wipe out the pan with a paper towel after cooking each tortilla shell. Be careful not to burn yourself!

Once the shells are done its time to cook up the meat filling. My go to is usually ground beef but I had some ground chicken in the fridge so I decided to use it this time. Ground turkey would be equally as delicious. Beef, chicken, or turkey, use whatever you happen to have on hand.

Use either ground beef, ground turkey or ground chicken for the meat.

Brown ground beef, turkey or chicken in a skillet over medium heat and drain off any excess fat. If using ground chicken or turkey you will need to add a tablespoon of oil to the pan to keep it from sticking.

Once meat is cooked through, sprinkle taco seasoning over the cooked meat.

Stir in tomato sauce. 

Add water.

Stir to combine.

Simmer over medium heat until liquid cooks down. About 5-10 minutes. You want the meat sauce to be nice and thick, not runny. Keep stirring until you get it to the right consistency.

This sauce is thickening nicely.

To Serve:

While the meat is simmering, chop up and prepare your favorite taco toppings and set up a taco bar so everyone can assemble their own Tacodillas with their favorites.

Gently pull apart each tortilla and fill with taco seasoned meat. Add some lettuce, tomato and sour cream. 

TIP: Keep Tacodillas in the oven set on low heat until you are ready to add your favorite taco ingredients so that the cheese stays melty. The tortilla shells will stick together when the cheese cools off and make it hard to pry the tortilla apart to add fillings.

Add additional toppings of your choice. These are delicious with chopped onion, cilantro, sliced olives, avocado and homemade salsa.

It’s so easy to make out of this world delicious salsa. Once you try my favorite recipe for salsa you will never buy the store bought kind again!!!

These Tacodillas pair beautifully with a side of Spanish rice.

Or if you prefer, serve them with a side of my all time favorite refried beans. You can scoop them up with tortilla chips or place some in your Tacodilla. YUM!

What do you get when you combine a taco with a Quesadilla? You get a Tacodilla!

Ingredients
  

  • 12 flour tortillas
  • 4 tbsp butter
  • 1 tsp garlic powder
  • 1 tsp seasoned salt
  • 2 cups cheddar cheese, shredded
  • 1 lb ground beef
  • 1 pkt taco seasoning mix
  • 8 oz tomato sauce
  • 8 oz water
  • lettuce, thinly sliced
  • 1 tomato, chopped
  • 1 avocado, diced
  • ½ onion, chopped
  • 1 bunch cilantro, chopped
  • sliced olives
  • sour cream
  • Salsa

Instructions
 

  • In a large skillet over medium heat, melt a tablespoon of butter and add a sprinkle of garlic powder and seasoned salt.
  • Place a tortilla in the pan.
  • Add ¼ cup cheddar cheese and fold tortilla in half.
  • Fry tortilla on both sides until browned and crunchy.
  • Place cooked tortillas in the oven and keep warm on low heat setting.
  • Brown ground beef in a skillet over medium heat and drain off excess fat.
  • Stir in tomato sauce, water and taco seasoning.
  • Simmer over medium heat until liquid cooks down.

To Serve:

  • Set up a taco bar with your favorite toppings.
  • Pry each tortilla apart and fill with beef, lettuce, and tomato.
  • Add additional toppings of your choice.
  • ENJOY!
