Korean Braised Potatoes, An Unusual, Unique Asian Inspired Side

Oh the lowly potato! How do I love thee? Let me count the ways! Another potato recipe? Why yes, because you can never have too many ways to prepare potatoes!

Potatoes are by far the worlds most versatile vegetable. Whether you boil them, bake them, fry them, mash them, or drench them with loads of butter or cheese or bacon…I guarantee there isn’t a person on the planet that doesn’t love potatoes in some form or fashion. Thus the need for yet another delicious way to prepare them! And you are going to love this one!!!!

You don’t typically think of potatoes when you think of Asian cuisine. Rice is the more common starch served with most asian dishes. So when I ran across this recipe I knew I wanted to give it a try. It’s an easy to prepare side that pairs beautifully with my favorite Chinese Spareribs.

When a handwritten recipe on a yellowed piece of paper falls out of a vintage cookbook with a note that says, “these are really good” you know you have to give it a try!

Chinese Spareribs with a side of Korean Braised Potatoes is a delicious Asian version of the classic American combo of Barbecued Ribs with a Baked Potato.

You are going to love how easy it is to prepare these flavorful potatoes. Start by combining the ingredients for the sauce in a small dish.

Only 5 ingredients, honey, soy sauce, sesame oil, garlic and potatoes.

Peel and cut potatoes into 1 inch chunks. Try to keep all the pieces about the same size so they cook evenly.

Place the potato chunks in a saucepan and add just enough water to almost cover them.

Add the garlic/soy/sesame/honey sauce to the pan.

Stir to combine.

Bring to a boil over medium high heat and simmer potatoes, stirring occasionally for 15-20 minutes; until potatoes are fork tender and sauce is reduced.

The sauce will cook down and thicken to a sticky glaze like this.

Remove pan from heat.

To serve, sprinkle each serving with sesame seeds and garnish with a few chopped green onions. Enjoy!

These were so creamy and delicious with the sticky asian glaze! They are definitely going to be making an appearance at the table on a regular basis!

I think it’s time to make Pork Kabobs so I can serve these tasty potatoes again.
